I actually made this today ! Not this channels recipe but from another. Did not see this channel earlier. Slightly different Recipe but it turned out Great ! I made the Peru Chicken too !! Charcoal grilled it on a round Weber !! Kids loved it !! But yeah pretty Spicy !!

This is a good rub. Tweak it the way you want too. I usually add some extra cayenne and omit celery seed.

When you flip it, you should flip it a quarter turn. then when you flip it again, it should be a quarter turn as that lets you know that you’re on a hot grill not the same spot that has cooled

I use Lawry's marinades and brine it by adding Kosher salt & water so the butt is completly immersed for overnight, about 12 hours. It comes out moist with a tad taste of the marinade and what I like about Lawry's is they have many different flovors

I absolutely love my reverse flow smoker. I'll never go back to any other style smoker after getting mine. What a difference it makes
