3 of the 4 picks for favorites were correct! Never trust a Mac n cheese recipe that wasn’t created by a Southerner. It helps if your Momma taught you how to make it with the recipe of: some of this, enough of this, do that until it looks like this, bake it until it’s done…I literally have that written down and it makes sense to me (the ingredients of this and that are listed, but not the amounts, baking temp, time to bake, what kind of pan…you just cook with her and you learn how!) P.S. Plain panko crumbs with little pieces of butter on top for the win.

I use the Nestle recipe with metric ingredient measurements so the flour/sugar/butter ratio is correct. I add toasted walnuts (put in 350F oven for about 7-8 min, let cool.) I make sure that the butter and eggs are cold straight from the fridge, use Ghiridelli 60% cacao Dark Chocolate Chips (mainly cause I love dark chocolate, and don’t like things too sweet…use the ones you like), and I use about ⅔ of the amount called for, because too much otherwise. I put in about a full cup of large chunks of toasted walnuts (optional, but really is soooo good) and drop from a spoon in about a 1 ½ - 2in diameter ball-ish. Doing that keeps it from spreading and keeps it soft and delicious. Note: I live in a humid area currently so need to adjust the amount of flour…you don’t want a gooey dough, you want it to not be stiff like shortbread, but somewhere in between…if you know what I mean. Using cold butter and eggs helps that. Also, I put the mixer bowl into the fridge in between batches. (I use a Kitchen Aid stand mixer for the whole thing.) I have also made these using Splenda (about 2/3 of the amount called for, not a 1:1 ratio, Splenda is super sweet) and Brown Sugar Splenda and they tasted great, but didn’t brown…so looked a bit odd, but if someone in your house needs a low sugar recipe, Splenda worked great taste wise. (P.S., don’t try making a cake with Splenda…at least from my experience.)

I recommend scaling down the recipe to use just 1 whole egg. For example, this recipe uses 2 eggs, so I'd cut all the quantities in half to make a half batch!

I always enjoy watching copycat versions of Levain's cookies. I've made various ones for years. But after watching the Epicurious video on bakery style cookies where bread flour was used I'm now considering experimenting with that. I normally use cake flour. And they turn out beautifully delicious. I also enjoyed your explanation for why each ingredient was added and what that ingredient does.

The shortbread made with powdered sugar is ideal and better if you use a cookie press with discs and make various shapes for fancy smaller cookies. It does not work well for a thick shortbread and it is not a dough meant for the thick shortbread. But perfect melt in your mouth when using the small appropriate fancy pop in your mouth in one bite size and shape of cookie. To make your shortbread last you need to use a storage tin box and stack them with parchment paper between and put a paper towel on top. Also good to keep them in fridge or even freezer. definitely has walkers flavour only melt in your mouth with some crispness and walkers has a more firmer feel. Forget the rice flour and you do not need fancy butter but go for it if you want. oven temp can be 275 or even less for the cookie press cookies and watch them closely. Use parchment paper.

@@atlas4698 Yes. The filling for the Buche de Noel cookies are kind of fiddly. They're more on the bitter side due to the cacao nibs. I would suggest using less salt for the matcha and sesame shortbread. It came out a bit too salty. I didn't have an issue for with the matcha and sesame flavor. It might be due to me using half ceremonial grade after running out of my baking matcha. In addition, as a black sesame lover, I had also added a bit extra to begin with.

Great comparison, thank you🎉 I have been making Shortbread for 40+ years. My basic recipie came from Gourmet Magazine back in the 80's and have to say I like them all! I have tried many varieties, added flavorings, dipped the bottoms in chocolate, etc. I added a bit of orange zest + vanilla and those were a big hit and are now a Holiday staple. Some recipies I have seen add corn starch instead of rice flour for a softer finished cookie. I have not tried it yet, but will this season. Has anyone tied it? Would love to hear your results.

Recipe: www.ambitiouskitchen.com/best-pumpkin-cinnamon-rolls/ but use pumpkin spice eggnog instead of the milk in the dough, pour 1/2 cup warm eggnog over the rolls just before baking, and add a few tbsp of eggnog to the frosting instead of maple syrup!
