Thanks for your research on dumping dough, I’ve had the worst day today making dumplings. One recipe called for brown rice flour with white rice flour, tapioca starch, salt, oil and water. It was too dry, cracking. Second one white rice flour, tapioca starch, salt, oil and water. This one way too sticky and still doesn’t hold together. Now you’re saying tapioca flour? Is that starch? Sweet rice flour ? Never heard of it. I’m thinking next time if I feel brave I will try it if I can find all the ingredients.

When you were using cornstarch to make a gravy or a béchamel or anything, you must add cold water or cold milk, and it will mix beautifully with no lumps warm water will make it clump instantly and you also cannot taste it and put that implement back into the pot because your saliva will break down the cornstarch and make it runny. ❤

Dry the chicken, coat in all-purpose dry flour to absorb any moisture, and drop into a wet batter recipe (double dip for a thicker coating) ---> 1 cup rice flour, 4 tablespoons of cornstarch, 1 tablespoon baking powder, 1 tsp of salt, 3/4 cup of ice-cold water. I used club soda. This recipe is gluten free, and the batter stays crunchy way longer than the all-purpose flour batters with just cornstarch (it always seems by the time I'm done frying a large mess of scrimp and say 4 pieces of fish that the breading is getting soft and less crispy with this type of breading). I've tried 4 recipes, and this is the one for scrimp, chicken, or fish. It reminds me of my favorite fish restaurant Captain D's. I only fried it once but have seen recipes that calls for a 2nd frying. The leftovers can be heated back up in the oven and the crunchiness returns.

I do a mix of corn starch, coconut flour, corn flour and seasoning. I mix these.. and it leaves perfect results. Always do an egg wash on the chicken though if you wanna add buttermilk to that egg wash highly recommended.

Sorry, for the late reply. Depends where you live! In the USA I used Bob. Red Mill - in Europe I order from naturitas. And you can use any millet flour that says "gluten free"

I was happy to find this recipe. I have frozen strawberries and frozen rhubarb. However I wish you would have mentioned the measurements of your ingredients. I do not have a scale . I guess I will just have to use my recipe and hope it turns out. Thank you. Oh and your strawberries were extremely plump and nice-looking. And you used a whole lot of them in your pie. My recipe only calls for 1 Cup.

Millet Flour 100g (⅔ c 2 tbsp) White Rice Flour 120g (¾ c) Potato Flour (USA) 40g (¼ c) Cornstarch 120g (¾ c) Tapioca Starch 100g (⅔ c 2 tbsp) Psyllium Husk 60g (¼ c 2 tbsp) Water 360ml (1 ½ c) 2 tsp Salt 2tsp Sugar 2tsp Yeast 1 ½ tbsp Olive Oil

I have not tried it with almond flour. I would think the texture would be very different because almond flour is much denser.
