I like to us either chicken stock, chicken broth, chicken bone broth or the water used to boil chicken instead of plain water. My Sito made her rice that way. Sometimes she would brown pine nuts and add it to the boiling rice mixture.

I found the instruction to for the cooked chickpeas to be 'barely covered' by the cooking water results in a hummus that is too thin (even using the entire cup of tahini). Better to slowly add enough water to achieve the desired consistency

Made some again this morning before seeing this but made a mistake and put baking soda instead of baking powder. They came out flat but delicious. This is the 3rd time I've made them this week, my family loves them and make quick sandwiches throughout the day 😆

You'll find in at ethnic grocers in the Arabic or Mid-east aisle. It's called "Syrian Mixed Spice", or "7 Spice", or even just "Mixed Spice", "Baharat". It's a mix of: Allspice, Cardamom, Black Pepper, Nutmeg, Clove, Cinnamon, and Ginger www.thespicehouse.com/products/baharat

Yes but you might want to use a bit more butter and cut back on the yogurt a bit to compensate.

You just melt butter and pour off the fat leaving the white bits behind (they can be used to cook or bake something else). Why not do that?

I don't know the country but the best falafel I've had is at Montfort grill house medditerenean and it has the best falafel .... I've EVER tasted... Tastes so good ... Just watch out for the pita it has sugar in it .. u can make your own and they will put the falafel in for you ... @Damascus Cuisine
