Ha Ha - it's usually the Beigli that stresses the Hungarians out when it cracks - but no reason to fret as it still tastes so so good. With the Poszony kifli did you make sure the filling had cooled down completely before rolling them up. Also precision digital scales are so cheap these days - various websites talk about a ratio of 35g dough and 25g filling, which reduces to 50g once baked. I used this ratio recently but next time I might up the filling to 28g. Also make sure the filling reaches to the end on both sides - no one likes biting into dough where there is no filling. Many recipes use milk in the filling but I have seen a few now using sugar syrup (such as in this video), and again I think I will do the same next time. Using syrup instead of milk is meant to extend shelf life and help them freeze better without the filling separating. But still use milk in the dough. Give it another go because these little kiflis are fantastic. And to Dorvy's Kitchen - yeah a great video!
