Original recipe of khmeli suneli is lost. Main ingredients are coriander, utskho suneli (Fenugreek, by the way, Georgian Fenugreek is little different) and Imeretian saffron (Marigold's ground petals). Everyone in the kitchen does this mix little bit differently. With all due respect, your version has too many ingredients, however, it's interesting.

Looks great! Good explaining that you should taste as you go and adjust seasonings and amounts accordingly. How my Mom cooked. Never used recipes. Just by feel and by taste. She was a big fan of braising. Low and slow is key for developing complex flavors, but most home cooks don’t have the time and patience! The opposite of fast food, which is fried hot and fast to save $.

I have never made any kind of kabobs, and am going to try with boneless chicken thigh meat, fresh mushrooms, bell peppers. Would this sauce work with this?

An authentic recipe has ONE fish of a runt like catch( NOT this abundance of the sea,) Some prawns Mussells.. Saffron Olive oil And broth Not a RICH MANS spread.

This was a while ago so I don't know if this comment will be seen. Still, I made this dish today and would like to comment on how it went. First: it went well overall, and I will make it again. Second: I wish I had known how LONG it would take for that many onions to caramelize!! Worth it, but took MUCH longer than expected. Third: the potatoes took closer to an hour to really look like the thumbnail. Maybe it was my particular Dutch oven that caused this, but that's how it went for me. Overall though, like I said, this recipe is WONDERFUL and I will absolutely make it again. Thank you!!

What kind of farmers cheese do you use exactly? I tried 10% cheese and it was too runny, not thick as yours...☹

I use friendship brand. Sorry yours were runny. You could strain yours through a cheesecloth overnight in the fridge with a weight on top. Alternatively, try using a little more flour.

If your farmers cheese is too runny, you have to “drain” it. You can put down several paper towels or a tea towel and gently put your farmers cheese on top of that and then put it more paper towels or tea towels on top and then perhaps a weight of some kind. I have seen it done that way. I’ve also seen a number of Russian grandmothers make these pancakes and they talk about draining their cottage cheese/farmers cheese as well.

Folks, if you want to reduce the saltiness and sourness of the sauerkraut, put it in a bowl and add a half-cup of cold water, swish it around for a mere five seconds, drain in a sieve, and then gently press on it. Don't rinse it too much or you'll lose the flavor.
