Use beef and beef bone for bulalo.Boil for a few minutes and discard the broth.Add water and boil again with garlic onion black peper.Add your veg when almost done.

Valentina , in order to remove the blood remnants, pour out the first boiled water. Wash the meats again to remove the blood remnants. Then replace the water and let it boil . Continue cooking with low fire until the meat is tender. Add water if the soup diminishes and continue cooking.

Hi Valentina, BULALO taste better if you add few wedges or slices of fresh ginger while boiling the meat. It adds flavor to the dish.

Hello from Dubai,i love Bulalo and this i cooked for dinner and i put ingredients Pork bone marrow ,potato ,corn ,cabbage or pechay ,onion,patis,pork knorr cubes and more ginger in Bulalo gives more taste and more delicious🫶🏻

Yes, you have to scoop out the scum that floats to the top of broth when cooking bulalo or nilaga. It is the denatured congealed protein that comes from the meat. It is essentially the same protein that makes up egg whites.

Since you're limited of exotic vegies there in Russia, you can use celery, carrots, kohlrabi,(roots and tender leaves) turnips and roots of the celery called the Jerusalem artichokes. You can put garlic and ginger, thats how i make my beef soup it improves your immunity. You have to sauté the onion, garlic, ginger first, green bayleaf, stewed tomatoes if you have then you add your bones simmer half-way before you put the lean meat and just slowly maybe for two three hours to get the best collagen from those bones.

If you want to get the dirt from the meat boiled at least a minute and wash again the meat & its time to boiled until it become tender.hope someday you can have a vacation in Samal.

Put more Garlic don’t sliced and whole black pepper these have great aroma on bulalo, Chicken cubes. I add some butter for me. Carrots and Potatoes yes it’s good too.

Valentina, thats the variety of cabbage grown in winter. It is called Napa cabbage. Usually used for kimchi, salad, or for soups. These napa cabbage are milder then the regular green cabbage. Your soup looks good. Enjoy and God bless you and your family 🙏 ❤️

Valentina, you did the right thing when you skimmed off the scum from your soup. Taking away those bits makes the soup pleasant to taste. Corn and cabbage are good in bulalo, but you dont need to shred cabbage into strips like Borscht...medium chunks would be better so they dont get overcooked and become too soft. That chewiness from the Chinese cabbage adds to the Bulalo experience, the size of your cut will change the texture. Also, you don't need to put that much cabbage, its different from Borscht , you add less cabbage . You can also add a little bit of Russia into your soup by adding some chunks of potatoes , biting into tender potatoes is so delicious ..... Also, if you are able to find it in supermarket, adding a teaspoon of fishsauce into your bulalo further enhances the flavor . Dont use oyster sauce ...oyster sauce is delicious in pancit and bbq, but not bulalo. It's much too rich and salty. When making Bulalo, you want lightness and clarity of flavor , because beef is already rich in flavor . Just enough meat and enough veg floating in broth, dont add too much cabbage .... Dont put malungay or lemongrss, those are delicious ingredients , but they will take away from, not enhance, the soup... Bulalo is about BEEF flavor , lemongrass and malungay will overpower with their citrus and herbal flavors and it will not taste the same.
