My starter with 1:2:2 peaked at 4hrs then falls about 1cm after 2hrs, then peaked again at 6hrs 5mm greater than the 4hr mark. What peak time do I use?

@bartbtsful all artisinal boules from every good shop and all the ones I make, are either not crispy or crispy for a few hours and no more than a day. Why is a commercial shop from many different shops that are well known in. So Cal not crispy on the outside? Why is mine, now that I'm experienced and successfully making sourdough not crispy? I have Tarine, Bread Illustrated, Flour, water, salt, yeast and other books, and I'm hyper methodical.

If you wanted to stay crispy, bake it darker, or bake it longer at a lower temperature. OR, once it cools, wet the outside of the bread and bake again for 5 to 10 minutes.
