Greek-American Gyro Cones are made by machine process with a combination of meats, spices and breading, that help mold and hold the cone shape. Companies like Greecian Delight, DeVanco and Kronos all have similar reciepes, but can not be mistaken for the Stack, Herb and Slice version we all love back in Hellas. This video is more of a product warning message to legally keep the company out of health inspection trouble. Yes, it is correct to use a non serrated long knife flat against the cone, but you can see his slices are creating wave shapes, but I've seen way worse. Cooking it just right dark brown and slicing thin is key to enjoyable flavor and texture.

Also, each cone can cook with surprises along the way. Methods on how to cool and rotate and cut at the start, are very different from mid way through and definitely different from the tail end of the cone. Because it's a meatloaf, it will shrink or swell or take a new shape, or have air pockets that can burst open and splash you with hot grease. Some of this is due to processed cones that are made cheaply for the company to save money. They sometimes wrap a larger outer mold to a smaller cone and when reaching that point cutting a fourth of the way through ...that's when these issues increase. A proper phase by phase video would be helpful to novices. I cut that sk*ta for over two decades.

Yes, the Gyro or Souvlaki in Hellas is stacked and prepped by butchers or in house and it slices off differently. You are incorrect about it being falafel. Falafel are like middle eastern veggie/bean hushpuppies and is not anything like Gyro or Shwarma.

I had 3 gyros shops for 17 years and we always cooked to order, we never cooked ahead and we never cooked on a grill. To this day people tell me we had the best gyros in the world. Of course we only used Grecian Delight products.

This method of cooking is for food safety. Most Health departments now a days will site you for leaving a cone on and not cooking properly.

raghu devgan - To elaborate, It’s a one time cook. At the end of the day, if you have leftovers, take it off the cone and cook the remaining meat fully on a grill. Then cool, seal and store in a refrigerator.
