I made this following exactly using vegan oyster style sauce, no soy sauce and without any additional seasoning or the toasted sesame oil at first to see what it's like. It was good but a tiny bit bland so before I put the leftovers in the fridge I added the sesame oil and a little soy sauce and boy did that up its game! Can't wait to have another bowl.

Final product looks good but I think the air fryer is a wasted step since you're going into a frying pan anyway. Not sure what you gain with that except 2 things to clean up at the end .

Can't wait to make this. I saw someone ask about this on the Las Vegas Vegans Facebook page so I looked it up and don't think I've had it. Then yesterday was watching the first episode of Squid Game 2 and One character says: "Your jjajangmyeon is getting soggy. Come on, eat." Look up Indian baingan bharta. It's very similar, except we stuff green chilli like Thai bird eye pepper and garlic cloves inside the eggplant. Also, we use raw mustard oil instead of olive oil, so do try that for some raw oil flavour. And one eats it with rice, too, as it's that flavourful.

I would cut out the soy sauce and dark soy sauce and maybe the gochugaru and replace it with mccormick's montreal chicken seasoning which is low sodium and then possibly add sriracha which is low sodium with the other ingredients, it will taste good and it will be healthier. For some darker color since i'm replacing soy sauce, you can add some paprika powder.

I do this without a rice cooker as I am poor and lazy. I use an enamelled cast iron, boil the rice in water 1:2 for ten minutes and towards the end of the ten, dump the ingredients on top, add foil and the lid, let it boil for another minute or so and, switch off the heat and leave it to steam for 10 minutes. Boom, food. Sometimes I fry the (washed, uncooked) rice in oil first till it's golden brown and then boil it, for instant fried rice.
