I noticed 1 tsp salt in the beginning of the video, but not on your ingredient list. It isn't specified when to add it...Would it be with all the dry ingredients before making a well with the eggs?

This was a bit of an odd recipe for me but the crumbly dough did come together after about 3 minutes of kneading. I was kneading for 5 minutes and rolled and cut my first stars. When I went to knead the scraps back for a second set of stars the dough began to break like. It somehow got juicy or greasy. I could not get more than a few more stars from it before I attempted to "fix" it with more sugar and more flour but to no avail. The cookies that I did get (about 20) were delicious and a unique taste of Christmas I only got to try because a Swiss friend recommended I make them! I did double the glaze recipe as my mixer does better with more volume. It was easier to hold a full zip lock in my palm as well for icing control. If I do it again I will stop kneading right when it comes together! Thank you Patrick, this recipe was a joy!

Danke fuer dieses Video - ich wusste nicht genau wieviel Lye ich nehmen sollte, das erst mal wo ich Bretzen gebaken habe, hatten die kleine Pisteln auf der Haut - Der Baecker hatte mir gesagt ich solte die Bretzen nach dem Eintauchen 1 Stunde lang stehen lassen! Das war bestimmt der Fehler, sie hatten auch keine Haut, wie du beshrieben hast!!! Geiles Video, werde sie bald backen und bescheid geben! ❤

Thank you for the recipe! According to my scale, 1 1/3 cups of lentils = 150 grams not 250. Also, did I miss you adding the tomato paste? It is in the written recipe but not in the video.

Liquid is measured in litres like millilitres not grams....

Yes, but 1gram = 1 Milliliter so it’s usually easier and more accurate if you use a scale instead of a measuring cup

Schönes Rezept, einfach gut. Oftmals verwende ich Hühnchenbrühe statt Wasser oder Bier, und das klappt auch gut. Schmeckt ein bisschen wie eine Hühnchensuppe. Neulich abonniert.

I think the biggest issue with it is that it's a franchise that is pretending it isn't one. It's run like Subway but a lot less successful. So you'll have some local places that are just gonna have terrible food and just want the name associated with them and others that will go all out. It's a lot less consistent than like a five guys or mcdonalds

Seeing the process of your Käsespätzle (rather, both options) helped me to realize that I had been using the *modern* method, and that it was the *traditional* method that triggered my nostalgia. I know it was more difficult, but thank you for also showing the traditional method. I couldn't figure out why/how I was grating my spätzle wrong (compared to what I experienced eating in my treasured memories) - but I should've been using the scraping method the whole time! I've only recently started watching your videos, and look forward to more episodes of the "cooking roulette" game (or whatever you call that challenge with the nerf gun). I've often thought that because of the globalization of cuisine (over the last millennium, or so), it is difficult to pick a specific new cuisine to learn to cook (rather than just lazying out and making a "fusion" dish after some light research) - but applying random chance, and a limiting set of rules makes the decision-making process a lot more manageable, and creates an opportunity to at least approximate an "authentic" experience. Thank you so much for coming up with this mechanic! I will endeavor to use it to broaden my own répertoire!
