Is it not possible not to sieve the pumpkin? Because onces its on fire, the water will drain, especially knowing that a binder will be added? Or is not because it doesn't have the capacity to swell as one stirs?

Almost zero carb! Perfect! As a Nigerian who has become very conscious about carbs. Every country has their low carb alternative now and they eat these alternatives for longevity. I visited Japan once and I noticed that some Japanese folks substitute rice sushi for cauliflower rice. In Italy where I presently live, some Italians substitute Pizza crust with cauliflower pizza crust. Some of my Mexican friends also substitute their tacos with cauliflower tacos as well. So I believe cauliflower has become an excellent alternative to many types of carbs worldwide. The only time I actually eat normal carbs like brown rice and green plantains is when I want to bulk my muscles. I eat them as pre-workout meals to burn them off during excercise. Either long walk exercises it gym workouts. One of my favourite Nigerian breakfasts that I have found a low carb option for is Akamu and Akara. Instead of using cornstarch to make the Akamu custard. I use boiled carrots. I chop them into small slices and thoroughly boil them till they are mushy not grainy and then put them in a blender and blend them to a smooth consistency. Then I put them back on the fire and stir till they get that thick pureed consistency. That's how to make carrot Akamu. As for the Akara, I allow the black eyed peas to rest in water for 24 hours to soften it and I don't peel of the skins afterwards. I blend the beans with the skin as the skin contains all the fibre nutrients to neutralize the carbs and then deep fry in extra virgin olive oil or sunflower oil. It's the same logic. If you were to eat pottage beans, you wouldn't peel off the skin so there's no point removing the skins when you want to make Akara. The Akara also tastes identical even if you don't remove the skin of the beans. Remember you're not to add any sugar or milk to the carrot Akamu! The natural sweetness from the carrot is enough to sweeten it. I guess you should try making the carrot Akamu and black eyed pea Akara on your next video. They even taste better than the standard stuff. There's also cauliflower peppersoup with catfish, tilapia, chicken or bushmeat peppersoup. The cauliflower can act as a substitute for the rice, yam and plantain you would normally eat with the peppersoup. Cauliflower peppersoup is just basically boiled cauliflower which will normally taste like boiled potatoes or boiled yam and then you pour the peppersoup over. It can be just as filling but with less than 1% carb. Boiled cauliflower could also be used to eat with pottage beans. Cheers.....
