Basically the same thing that I've shown in the video, except the effect is going to act as if you e.g. had a visor equipped since it's keeping the head's position

Would this be a good way to keep track of whether a player is currently blocking or dodging? To perform checks on whether the character being currently attacked has either states, and give a different result (Ex: damage reduction). I didn't know this existed before.

You can make it very realistic, the issue is lag on lower end devices which many players are using. So for a real game, most of the detail and effects will not be seen on those devices and may also cause crashing.
