Hello have you tried out the esp-drone project by espressif systems? I am implementing it in my project but they used brushed dc motors and I am using BLDC motors like you did. Do you have any idea how i can modify the code in order for it to work with bldc motors?

As soon as I plug the esc to the battery , motor starts beeping with a second of duration...I can't get my head around it... There is something about esc calibration but i am confused on how to do this with esp32 board. Haaalppp!!!

Most esc on start up requires you to pull down the throttle to 0 to let the esc detect the pan signal

When doing with esp32 make sure on start up the pwm signal for the motor is at 1000ms so the esc can recognise.

I'm sure you already realized the issue but the 9axis sensor (MPU9250) should be in the center of the drone with no offsets (unless already accounted for within the program)
