Hello have you tried out the esp-drone project by espressif systems? I am implementing it in my project but they used brushed dc motors and I am using BLDC motors like you did. Do you have any idea how i can modify the code in order for it to work with bldc motors?

Great project, i alway thought that the esp32 is a great microcontroller for a drone, much bether than the stm32 f4 and f7 currently used in flight controllers.

I'm sure you already realized the issue but the 9axis sensor (MPU9250) should be in the center of the drone with no offsets (unless already accounted for within the program)
