THANKS so much. Question - I have my first order soon - 100 people. I'm doing 8, 10, 12" round pan (3" deep Fat Daddy). Does that seem like enough? Should I add another layer??? I used their guide, but seeing this makes me think I am coming up short...sigh....

In June, when it's humid where I live, I only need 2-3 tablespoons of liquid. Whereas in the Winter I need 6-8 Tablespoons! However, that number is just a guide. You want to get it to a consistency slightly stiffer than creamy peanut butter!

I recommend starting with a simpler design like this, doing the borders at the top and bottom of the cake. Once you're more comfortable with piping, you can add more detail along the sides!

Free Market: what ever the market will bare.. If you ever make a custom cake, which I do for all 4 of my grandkids for their birthdays. It takes a couple days of work to make them and the mess in the kitchen!!! Try it and you'll appreciate the cost...

You can brush it on if you prefer. I prefer the spray because it's a more uniform coating.

You could take a pic of it with your phone (a head-on pic so it's straight) and upload that to Word to resize! I'm not that technologically advanced, but have done that before with success 😂

I try to be empathetic to unique situations. I rarely keep deposits, especially if I can fill the spot with another order. If it's a last minute cancellation and I already started, I will keep the deposit to cover the time and money already invested into the cake.

I don't listen to those "rules"! I refrigerate ALL of my fondant cakes. You just have to learn how to work with refrigerated cakes if you decide to do that. Just a TEENY bit of coloring is needed. I use either Americolor golden yellow or brown depending on what kind of beer it is. Golden yellow is more for a light beer, while the brown is for darker ales.

I have an iPhone 12 Pro Max. I bought it a few years ago and invested in the one with the most memory (over 500GB) so I wouldn't run out of space! I also got a MacBook about a year ago so my phone could easily communicate with my laptop. It's so easy to air drop videos to my Mac to edit them!

My buttercream doesn't get hard like that. How do i fix this problem. I use margarine because it's more affordable where I live. Could thst be the reason?

That definitely is the reason! When you have margarine and butter in the refrigerator, the butter gets really hard when it's cold. The margarine always stays soft. When I put my buttercream cakes in the refrigerator, the butter in the icing solidifies and sets the icing really hard!

I like to make and color my fondant in advance. I also add the tylose at that time. When I go to work with it, sometimes it is a bit rubbery feeling. Am I putting too much tylose powder? Maybe I should wait to add the tylose until right before I'm going to use it?

That could be the culprit. When I make fondant, I add a little bit (1/4 tsp per 2 pound batch) of Tylose. Then, I tear off a piece and color it. The coloring thins out the fondant, so I add more tylose to help stiffen it up!

I cannot figure out how you use the paper. It always sticks. I let it sit out on the counter for an hour and it still sticks. I put in the fridge for 20 minutes and it sticks. How long do you let the cake sit before using the paper. (I used butcher paper)

Are you using American buttercream? If you're making a meringue buttercream, it doesn't form a crust, so you can't do this technique on that.

All the cake rules. I remember when I was starting out, one of the rules I kept seeing was that cream cheese frosting absolutely could not be covered in fondant because it wouldn't work 🙄I never once had a problem covering cream cheese frosting in fondant.
