Better than the UK style F&C curry sauce is the recipe from the good old Aussie kitchen bible, the Common-Sense Cookbook. It has oil, diced onion, diced apple, curry powder, flour and stock or water. For the best traditional Aussie flavour use either Keen's Curry powder or my favourite is Clive of India. This makes the best Curried Sausages you'll ever eat.

I reckon that if you hadn't added the salt and vinegar to the fish, the curry would have matched with the fish better. You added two different types of flavours and they don't gel together. I think you should have another go with the fish and curry (and don't add chicken salt either), people eat fish with curry in the UK.
