Looks really good! I think I would go with 2 different grinders for "modern" and "classic" espresso. I189d / i200d from in the Mazzer Philos for example. Perhaps a conical grinder for thick and chunky shots for milk drinks and people who prefer espresso as served in Italy and a flat burr grinder for a clear espresso with a lot of different fruity notes. I haven't done market research so I'm not sure about how many people know about this 😄

First of all, congratulations!🎉 For my opinion, I would turn the back of your beautiful espresso machine toward your customers. Reason for that: 1. The espresso machine can hide how barista brew the drinks. In some case, this is a good thing. 2. The barista, then, will always face to the customers

Thank you so much! I would love to do what you suggest unfortunately we couldn't get the machine onto front bar due to power and drainage limitations there. The plus side is people get to see the wonderful equipment and they see an honest view of our production. A big focus for us is cleaning as we go so that if stays looking pristine even in the middle of a busy Saturday lunch rush, like an open kitchen I guess!

You share the exact same fear as me! We don't make more than 15% net profit on any item sold, every other penny goes towards the staff wages, premises and equipment etc. I will see if that's what people want or not I guess!

Can’t wait to see some videos of the shop in action with all the vendors up and running Couple of questions: - can you post the names and model numbers of the espresso and grinders. - can you do a video on how the economics work with so many independent vendors sharing the same space? Is there revenue sharing or simple space / rent sharing? I think you said you are handling all the front of house so are you subleasing to the other vendors? That ends up being four questions, sorry

Heya, machinery and equipment is a capital expenditure rather than an overhead and for power consumption that's something I only recently got a view of as we needed to see how far fuel could take us. I work it out to be about 20p per 250g bag at the moment!

Great! Question: How do you plan for getting the coffee beans, and having those same beans available for your mainline coffee product? Do you buy a bulk that will last for a year? The season? Flow of your stock… What if an advertised coffee roast becomes unavailable? Would love to see more about how your open shop affects your stock and roasting operation, too. Heya we basically have an educated guess about how well a coffee will sell and then we contract with the importer a certain amount to be used over 6 months and once it's gone we move onto a new one! Coffee shop is open now (I do have a video I keep meaning to upload!) and it's definitely using a lot of coffee so that's a challenge now to keep up with it! 😅

I'm enjoying your videos from Ireland. Great information. I've recently started roasting with a popcorn maker and your videos have given me inspiration to pursue roasting further possibly selling at some stage. I think I'll give myself a year to develop my taste and smell senses with the popper before maybe getting something like your cormorant. We spend so much on coffee from the supermarket so home roasting should payback on a roaster after about 2-3 years! Best wishes with the coffee shop journey, a great achievement 👏

Honestly it's just what worked for this coffee, it was quite a high ferment and no matter how I messed with it I got the best results that way. I'm currently roasting a Uganda that's so insanely dense that it also benefits from the same. If you roast it too fast it's too vegetal and not pleasing to taste. On the flip side I've got a Rwanda that likes a nice speedy and light roast and comes out tasting like sweet tea! So it's different every time I'm learning!

Heya yes I should update this with where we are at in year 2. We have LPG costs calculated now we have a year of data. But I wouldn't include capital expenditure (such as equipment) in the item costs/profitability because that's recorded as an asset to the business with a depreciating value over time.

We figured it wasn't very practical without any washing up facilities, could only make a tiny amount in relation to the volume of footfall. But if we did one inside with facilities this might be doable, would need a fair few though!

Not allowed by the event organisers. We found in most cases they have established 'coffee shop' vendors and if we wanted our stall we had to not compete hence the 'samples'

I roast on a very small scale for myself but am considering roasting for friends and work colleagues, and charging them. I am interested in the price of green coffee, atm I pay abt £16 uk per kg. I am only buying 4kg at a time. I don't think that I will be able to even break even on a bag if I skimp on some of the more commercial costs. At what volume could I expect the price of green coffee to reduce?

Yup definitely a challenging one but I'm afraid it won't really drop until you're buying full sacks which are about 60kg (sometimes larger) OR unless you can find a smaller independent importer. Is there a reason why you cant price it the way you need to in order to make money and see if your market will accept that? No point in running a business for free :)

@ForgeValleyRoasters there is probably a economics of scale where below a certain volume it will be very difficult to make a profit, after that as costs cost come down then profit is possible. I'm not sure if I really want to make a business, I think that I will stick to a 1kg roaster and keep it as a hobby. Maybe charge work colleagues to help recoup some of the cost.

@ I do! CR600 LP fuel. It was my second roaster. I’m working with a Mill Ciity 1.5kg now. Use the CR600 for sampling.

Hello from Bath. Really love the video ~❤ Lower the air flow might help with less energy loss if you want it cleaner and juicier. You could try to roast with more convection heat than conduction. As the profile shows, ET(hot air) could not keep up with the BT, past 9mins the air is cooling down the bean and heating with conduction and radiation heat which is not very efficient(example:airfryer bakes faster than oven). Different roasters may vary depending on their design but showing the ET curve can help with understanding the energy level inside. If my guessing is correct, this batch has quite dry mouthfeel 😅

Love this detailed suggestion thank you for sharing it! I have played with airflow before but on mine it comes with a risk of excessive buildup of chaff so I definitely don't have a lot of wiggle room in this area. I also have a feeling that maintaining warmer air is going to add a lot of momentum and speed up the development phase when what I really want is a faster drying phase (leaving myself lots of room to play with later on in the roast). That being said I'm always up for an experiment so I'll try a slight drop in airflow as the roast progresses and I'll let you know my findings!

Seeing the size and scale up that you have already achieved from a sample roaster to a 5kg roaster, im surprised this hasnt become your full time job. What do you do for a living and how do you fit it all in?

Well sadly coffee isn't a get rich quick scheme so we quickly became busy but it takes real scale to start replacing income. My day job is as a consultant specialised in frontline worker productivity BUT I'm just going on an unpaid sabbatical over Christmas to help support things as we grow!

When we opened we just did local deliveries and markets and so dodged a lot of complexity like boxes and shipping (we did get a custom stamp made online though) and we printed our own labels at home. For someone else just starting what I'd recommend doing is coming up with a prioritisation of what's 'Must Have' vs what's 'Should Have' or 'Could Have'. I think there is a risk that when starting something big and new we get wrapped up trying to make it perfect on day 1 but in reality it's going to evolve and change no matter what you do!

Heya for the roasting course I went down to Winchester Coffee Roasters and took their course. There are others out there too though and it's important to note that the Winchester one is not SCA certified, I think there are a couple in London that are. The Winchester one was a bit broader and included the practicalities of running a roastery, it also used Roastmax roasters (which is what we are using at time of writing). The SCA ones are a bit more on the techincal side and follow a globally standardised structure to content so just have a think about which you think would be more useful for you!

Great content and useful to consider all facets, including 20% weight loss for green due to water removal I presume ;) As a baseline for comparison, Green Beans in Hong Kong for a good brazil natural, is around 8GBP /kg sk usually would retail at 20GBP for 250g bag. We @thelotroastery are small-scale but want to grow, ao having your experience will prove handy as time goes on. Cheers

What video editing program are you using. I use Davinci Resolve and it’s free and it’s voice isolation is really good and you can leave in or take out any background noise and leave your voice. I also use a Zoom F2 lab mic with 32 bit float which means you don’t have to worry about levels at all. It’s sanded my sound a few times.

I use Sony's software to render the videos off my camera and then I use a mix of clipchamp and capcut! Tbf I really should start editing my audio mix too as you suggest just always a matter of time available 😭
