i especially love goat cheese and learned feta was made from this as are many, and certainly does not cause a sensitive stomach difficulties. It's also interesting how there are foods that truly are complete in there flavor in adding a small amount, like for instance with sugar coated pecans and a specific salad dressing on either a salad or tri colored garden pasta as with many other wonderful recipes.

I just tried prairie breeze at Mansfield Bottle King, Mansfield, NJ. This cheese is outstanding among the cheeses I sample weekly at this location. Excellent price $5.99 on sale $4.99 I'm particularly appreciative that you mentioned the Mennonite community makes it, so we know who to relate that we are so grateful to have this available here.

Hi John and Kendall, thanks for the video for Cheese club every month. We enjoy doing it with our friends. One suggestion you may consider is to improve the sound quality of your video. What you have is fine if it is one person listening on their laptop or iphone but if you have it on a TV through the soundbar, the sound is not great and sometimes hard to hear. The best solution would be to buy a eternal mic for your iphone, It is not that expensive, you can just google it on youtube and you can found lots of recommendations.

Thank you for the excellent video. Just to be clear - bees travel up to 5 miles from the hive. They are opportunists and go for whatever is easiest to get to. Varietal honey is derived from whatever is in bloom at the time. Flowers such as Sourwood and Tupelo are only in bloom for two weeks and little else is in bloom at the time. The bees are given clean comb and then the comb is removed from the hive as the flowers begin to drop from whatever the beekeeper is trying to get. Sourwood is hands down the best tasting honey in the world as evidenced by winning international honey shows for many years. Sourwood is from the southern appalachian mountains - buttery and light. Honeys such as blueberry and clover are easy to get because the clover and blueberry fields go on for miles with very little else in bloom. One of the most unique southern honeys is kudzu honey which is purple and tastes similar to grape jelly. Honey varieties are verified by putting the honey on a slide and viewed under a microscope. Both Young Harris College and the University of Georgia have labs that verify honey varietals. We had our honey tested from the spring bloom in Atlanta and found that the majority of our honey was blackberry. To really geek out on honey consider becoming an international honey show judge. The classes are given at Young Harris College in May at the Beekeeping Institute. Google search Young Harris Beekeeping Institute for more info. Classes are also given for beginning beekeepers and many college level beekeeping courses from honey bee experts from all over the world at the institute. Just thought that you might find this information helpful.

Thanks for the videos! We love learning about all the cheeses and makers. We broke into our cheese box tonight and tried the Mini Harbison. The hardest part was not finishing it before it got to the perfect spoonable temperature. Delicious! Can't wait to try the rest!
