I tried it once and never forgets its taste. It is like fat and collagen combined but it's actually high in protein not fat. It absorbs any sauce you cook it with. That it is why a lot of people catch them and sell it with a higher price especially it's one of the most expensive dish you could order in Chinese restaurants. I didn't know it is almost extinct and very important to maintain healthy coral reef. I won't eat or order it anymore. 😢
