I just saw this episode today on PBS! :D Had to see if it was here on youtube because WOW that whole spice section with Rosemary is super helpful and informative! I plan on doing more with spices in the future and this really helps sort things out. :O :D

I never get the "tastes just like meat" thing. Vegetables taste great in their own right, especially when properly prepared. No ever asks what meat tastes like carrots?😮

I make a similar sauce I just chop up the veggies, add garlic,seasonings miso and tomato paste cook in a sauce pan for about a half an hour till the veggies soften then take my hand blender to puree it. It saves grating your knuckles. Sometimes some butter or olive oil. It hits the spot and is simple and uses up whats in your veggie bin. It's a flexible forgiving sauce.

I wish more wine makers would have very small bottles for sale. I don't drink wine and spending you know $8-10 on a bottle that I use 1/4 cup out of.......

You can freeze wine! It doesn’t fully freeze (more like hard slush) so best to use a Tupperware rather than go for cubes. Doesn’t affect the quality at all. FYI I came across this tip on a wine *drinking* forum so the result is certainly good enough for cooking.

To be fair he does say how much or visually show about how much of each ingredient. I'd say like 1tbs of the spices, a few scallions, maybe a few cloves of garlic, looks like maybe 1000ml of chicken stock? Maybe I'll just wing it and see 😂

There are a number of fermented chili pastes in Chinese cookery--doubanjiang 豆瓣酱 from Sichuan, for one, brings the heat and umami, and is available in the USA. I like to serve zozzona with the giant rigatoni, although I wish I could be good, affordable guanciale for it. I also make my own pasta for special dishes, and Chinese noodles are fun to make, too.

No, the larger and wider pot the pasta was cooked in is much more pleasant and efficient to use for mixing the two. Anytime you are tossing something, a larger wider vessel is preferable.

I second the “ don’t substitute for meat” approach. Fake, faux, dupe, versions of sauces, baked goods, roasted items, ect never taste as good. Use the real stuff, or find a recipe that does what you need it to. Down with fat free BS while we are at it.

I kinda agree. But for eg in this recipe, the mushrooms basically are the meat substitute which is a common strategy to sub mushrooms for meat.

@paulpellico3797 .... Agree ... I bet the well equipped kitchen he's cooking in, has more than one food processor on hand. Throwing away a half onion just because you can't be bothered to get a food processor, is a luxury that most people could not afford. Sometimes, I find these 'test' kitchens are so sloppy when it comes to little things like that.

The dukkah sounds really good, but I don't care for whole spices. Would it work with ground spice instead and woukd thecamounts used need to be adjusted?
