I remember this. He had been very good throughout but after they visited a Michelin star restaurant he said something just clicked and his cooking went to a different level. He won the series and went on to good things I believe.

I wouldn't expect onions in onion gravy, it's not French onion soup FFS. Just supposed to taste of it.

I like how the simplicity of the dish throws the competitors for a loop. It also truly tests their basics and ability to adapt.

For over a decade, Masterchef UK is always my most favorite, no drama and into the culinary details for the viewers.

If your palette is not used to intricate food flavors, how can the average person appreciate such fancy, ergo, fussy food!?

As an asian, I always doubt when classical chefs call something too spicy. It might be just right but not for the western palate.

Butcher and former pro chef here - shellfish or vegetable stock is too mild to stand up to the robust flavors in brandy, chilies, and fried tomato paste. Marcus most likely used veal, but I've followed this recipe both with supermarket beef stock and roasted pork bone stock (homemade) and both have worked great. Hope this helped someone
