I remember this. He had been very good throughout but after they visited a Michelin star restaurant he said something just clicked and his cooking went to a different level. He won the series and went on to good things I believe.

Butcher and former pro chef here - shellfish or vegetable stock is too mild to stand up to the robust flavors in brandy, chilies, and fried tomato paste. Marcus most likely used veal, but I've followed this recipe both with supermarket beef stock and roasted pork bone stock (homemade) and both have worked great. Hope this helped someone
