That's cute. I have a live-in chef, whom I've had for a very long time. My chef made gnocchi with shrimp and a red sauce, served with French bread. For dessert, we had a double-layer cake with avocado frosting.

For those of you not familiar with the culinary world, private chefs are a dream job. 1. For those that think 12 hours a day is long, believe me this environment he is in plus actually getting some down time between AND weekends off is far better than he would get as a chef in a normal kitchen, plus much less stress. 2. The pay is usually better as a private chef than you would get at most restaurants, not to mention the holiday bonuses that happen(sometimes). 3. Unless you are an executive chef, you are limited on your creativity. In a private chef role, you can do so many things. While some families like to have certain items each day of the week, it sounds like this family gives him some free range. 4. You become very close to your clients. If you don’t like them, you can resign if needed. Private chiefs go through talent agencies that give you auditions typically, so you are almost like a doctor in call in a way, except more for long term fills. Overall private chef is a dream job in the culinary world for some, some prefer to go the restaurant route. Happy for you sir.

Why not just roll the service fees into the per person price. I hate service fees and when I stopped including them and baked into the overall (non line item) price my customer base grew exponentially. People always feel like a service fee is a tip therefore negotiable
