You can’t wash out the flavor only the rawness of the meat and I’ve worked on a farm and I buy meat in bulk every week so I know why I advise everyone to clean it

Removing the seeds from any pepper makes it less hot although any part close to the seeds will be hotter than the rest of the pepper

I have a few stew peas videos that I just finished filming. (And by corned beef I think you’re talking about salt beef? ) I have one where I use oxtail, salt beef and chicken foot. Also one with salt pigtail and regular pigtail

That breeze is feeding your 🔥. There’s an outdoor spray that makes a barrier around you. Just spray around your area but there’s a breeze blowing so it wouldn’t work. Usually the smoke from the grill will deter bugs. It’s beautiful where you are.

Chef Bolo you sre not suppose to cut the fat off the oxtails. The fats are what you use to render the meat when cooking. Instead of using cooking oil you use it to fry the meat The fat is what give the meat flavour. I am coming from old school. It will eventually shrink after cooking.. Did you know you need animal fats? Like ghee, grassfed butter, lard and tallow. Keep up the good work. Blessings.

Thanks for the comment I understand you perfectly. I purposely brought it up in my video because even my immediate family members think like this, they would never ever cut the fat off either. But I cook 100’s of lbs of oxtail between my food truck and catering each week and I know there is no way to render that much fat without having oily gravy and fatty oxtail. Also it’s a preference that even my customers have come to love. That said it’s all love and this will be forever one of those issues that will never be resolved..from generation to generation 😂😂

GWAN GWAN my brother. I saw this on the homepage and decided to watch. I haven’t cooked Oxtails in years. Why? They’re not readily available in the supermarkets now where I live. I know it’s been a good 15 years since I purchased them. I would buy what I saw. I never had to trim mine but they still rendered a lot of fat after seering and cooked in the crockpot. Those teeny Scotch Bonnets were cute but too hot 🥵 for me. Question…if you remove the seeds and ribs of a Scotch Bonnet will that calm the heat? You can do that with a Jalapeño.

Yes some areas it’s difficult to get but it’s becoming more common. I’ve seen Costco has oxtail now. As with all peppers the seeds are the hottest part of the pepper, so you could cut away from the seeds for less heat. Green scotch bonnets will have the least heat and I don’t open or cut them when cooking because I want the flavor and not necessarily the heat

For the flame it’s usually due to the way it was shut off . Weber grills often encounter this problem. When that happens turn off the tank and disconnect the hose. Reconnect the hose turn on the tank and then your burners and ignite the flame. The should resolve that issue. To prevent this in the future try turning off the burners first and after they’re off then turn the tank off at the valve. Hopefully that helps. I don’t know why it does that but it vapor locks the line. Other than that enjoyed the video. Always like looking at the ways people do their boils.

Top man most definitely knows his stuff from start to finish cause what makes a top dish is a cook/chef that knows cuts of meat and knows how to prepare it before even attempting to wash and season it. Im well impressed.
