Have a place Off the Chesapeake Bay And we were able to Literally Pick out the crabs that we wanted from The crabber next door. And as you've shown the best crab cakes don't have a lot of extra ingredients in them. Just mostly crab meat

You're cooking just like me, I also throw in all the ingredients without knowing the process and try to figure it out as I go. I’m terrible at boiling and caramelizing vegetables, and my mushrooms always end up almost al dente, but at least they’re edible in the end. If the worst case onion pasta scenario turns out like this and still tasting decent and edible, then I’m gonna give it a go. Thx for sharing

Those onions are burnt, you need to caramelize your onions on medium low for about 40 minutes to do it right. The mushrooms should go in at about 25 minutes into the process too so they release their moisture and then soak up the flavors. Also, don't add water, add stock. It adds so much flavor to the recipe. It is so easy these days to start a KZbin channel but if you are a novice at cooking, please PLEASE stay off the platform because you are teaching average people how to cook poorly.

I love this recipe. Sometimes I feel like pasta but not with one of my usual (though delicious) sauces -- this is definitely one to add to the repertoire. A couple of notes: some of the commentators are right. Caramelising properly takes longer than half an hour. They need to be on low heat for an hour or more, depending upon quantity, quality of the pan and the vagaries of a particular stove. You think you had umami: try doing it for longer and compare the tastes. As this is a time-consuming stand over a stove, there is also the possibility of doing them in the oven -- same accessories (olive oil, seasonings), lowish heat --350° F -- for a couple of hours or more (again, depends upon the oven) in a foil-covered casserole dish, stirring after an hour and then every 20--30 minutes. They could be finished in a stovetop large pan, and the other ingredients added as you do. Second: I too would prefer Worcester sauce to vinegar as a finisher. And I can't see a reason for not cooking the pasta while the onions are doing and adding it before it is finished with some stock and some pasta water and letting it complete that way. But your way would work fine with small pasta, such as you chose -- I like fusilli, which are a little bigger, so would probably give it a kick-start. I also liked the video: some on here make us watch the chopping of every onion and they generally lose me as I do not need to watch that. You showed just enough to explain the way the onions should be cut --sliced, not diced -- and just got on with it. Same with the other ingredients -- you were not teaching your grandmother how to suck eggs. This is simple, basic cooking: the art is in your combination of flavours and explanations of anything you did.
