It depends how thick your coconut milk is my dear. If really thick then you add more water. I just do it by eye. It comes with practice. Hope that was helpful.

I don’t usually measure, but I’d say equal volumes (not weight) of coriander, whole green chillies and whole garlic cloves. Lemon and salt is to taste but I find I normally need more than you would think. Volume measurements are of dry ingredients because if the coriander is wet, you’ll get a different amount, so measure first then wash. After blending for the first time, you can add more of whatever you like, to balance it out according to your preference.

I haven’t been there in so long and can’t remember the name of the shop but it’s on the parade of market stalls where the Swahili mobile food outlets are. It’s a brick and mortar kitchenware shop. The food outlets are at the end of the street but the shop is somewhere near the middle. Don’t know if they are still based there. Hope that was helpful.
