Beautiful mushrooms, I love them SO much, but I can’t get them fresh where I live. Buttons, creminis, portobellos, SOMETIMES shiitakes are no problem, but all the rest I can get are dehydrated.

Oh man... we are wicked lucky to have made friends with a guy out in Brentwood, NH who has some gorgeous specimens! Runs about $18/lb for what he grows. His foraged mushrooms are typically about $24/lb. If you find yourself in southern New Hampshire, reach out!!!

@@ChezJohn They plan on the next supply being processed in about two to three weeks. They do have the option to ship. It will be boxed up with wall-to-wall food grade insulation and a crap ton of ice-packs. Give them a call though! See if they have anything in stock! Let them know Melanie sent you!!!

ROFLMAO No need to be sorry. I dont give tests at the end of the week! LOL Melanie, nice to meet you again! So - you probably already are using 80/20 with ground beef and pork, or 73/27 with 80/20. With ostrich being 95%-97% lean, Im only gifted 3%-5%. I ran three test batches... Ostrich with Ostrich tallow. Ostrich with one egg/sesame oil. Ostrich with two eggs... The ostrich/tallow was greasy. It didnt marry well after trying to develop the myosin. The ostrich/one egg/sesame oil/soup base. I found it paste-like. Even with developing the myosin, I found it mushy. Now, Ostrich/two eggs - I found a really good balance. Each egg has roughly 4.2g of fat. So - for a total of 8.4g of fat in one pound of ground ostrich, I was able to get myosin development (took longer to build but it did develop) and the right mouth-feel after cooking. No mushy texture, no wicked pasty texture, just the right mouth-feel. Does this make sense?

Some folks dont realize that most of the oyster sauce bottles on the market already contain added MSG. The same goes for tamari through San-J, it does not have it added but may end up with some because of the fermentation process. Kosher salt is more "accepted" by folks who have still yet to learn that MSG is safe/refuse to accept that it is safe. Personally, I am waiting to get a shipment of MSG to replenish my supply at home. We embrace MSG in our home. We also acknowledge that regular common foods have is naturally occurring. If you could see the sexy supply of local mushrooms that I have on my counter right now, it would blow the minds of the MSG-naysayers that their favorite wild mushrooms have natural MSG... LOL!

Truth be told, I love a good Chuck, freshly ground. There is more fat-to-meat found in Chuck and it really makes a difference on the mouth-feel. The local grocery store chain we have (local owned out of Massachusetts) will do these "Freddy Flintstone" cuts of Chuck steaks. I always request the meat to be harvested and ground up - AND to keep the bones in the package for stock-making. Chuck is also a great filling for homemade ravioli, lasagna, or any stuffed pasta!

Where I live, we have such a significant mixed representation of cultures/countries and I absolutely love all of it! I have met some amazing people from all walks of life through professional kitchens and also just walking into a family's business. My husband and I are fondly devoted to (what it is referred to here as) Persian/Middle-Eastern cuisines. The flavors, the freshness of the ingredients, and the love and attention that goes into this cuisine. It really is truly wonderful. I will always show kindness and respect because that's what this world needs again. Whether the cuisine I make comes from Turkey, Thailand, or Taiwan - no matter what, as a Chef, I respect the food and the cultures behind it when it is outside my country. I'm aiming for this to be easy to cut. By piercing the inner section, it doesn't blow up/puff up. The edge does a little and that helps with preventing anything from spilling over. 😊
