That initial 15 minutes on medium heat are very important. Otherwise potatoes do not get crispy. Thank you for the recepie, do you have any other suggestions for spices that work well with rice?

The paper towel or a kitchen towel wrapped around the cooking lid, absorbs the steam so the rice does not turn soggy

Not exactly the traditional way you make this rice!! There's never oil in the water you boil the rice in till al dente, as you will have to rinse the rice before steaming it. The oil always comes during the steaming process. Why not add the Safran before rinsing the rice while you are at it? Wonder if the person making this dish is actually Persian!!!! Hmmmmm.

Perfect recipe! Thank you! Only thing I changed was I used one stick of butter in place of the oil for the tahdig. Also, I added an extra tablespoon of yogurt to the one cup of parboiled rice. Turned out perfectly. Making it again tonight!

Also note, never use hot water from a faucet for cooking, only use cold. Hot water sitting around in a tank and pipes leaches out heavy metals or plasticizers. This is why old recipes often explicitly say to “use cold water”, the problem was especially bad with leaded pipes or soldering. There is also bacteria that grow, but generally these aren’t pathogenic when consumed, but can sometimes cause problems in other routes. Tap water isn’t sterile, so this is while boiling water is *required* for things like keto pots.
