I'm going to disagree on the method you used. In our family we make scalloped corn and we mix even the crackers and butter all together. Sometimes using a mix of whole kernal and creamed corn or just either. And bake for about 35minutes and when a knife comes out about midway from edge to center it would be done. I'm planning on trying it that way . With the addition of the peppers and the onions I'm sure it will be fabulous.

I have a hard-cover 1929 copy of Any One Can Bake (book cover said it was $1.50 back then!). My favorite basic muffin recipe comes from it :)

Pretty interesting about the coco powder butter paste 👍 . . . Speaking of coco powder . . . Every cooking show I can think of says it should be “Dutch Processed” BUT strangle NO brand in the store I go to states that it is “Dutch Processed” . . . So is it all “Dutch Processed” and cooking shows don’t even need to say it anymore?

My grandmother made this… with and without the pimentos & peppers. Without peppers, it was corn pudding, with peppers & pimentos and maybe a dash of chili powder and cumin, it was Spanish (or Mexican) corn.

This a Most looks like a scalloped corn adjacent recipe. Spilt the crackers in two half in the corn mix half on top. Dollop th butter on top of the layer of crackers on top

I'd double all of the ingredients except the crackers. I agree with Glen that the dish needs a bit more "flavour" in it.

RE: Sugar--Modern supersweet corn varietals completely remove the need. My people are Nobles (my grandparents from Great Falls MT. went by Mr. & Mrs. R.B. Noble) and this might be one of my great-aunts. The corn from the 1930's was very starchy and needed that sugar.

Like other folks here, I grew up with a version of this recipe called scalloped or baked corn. It was served on Thanksgiving and Christmas.

Hey, Glen. I hope you are having a great trip/experience to the east in the 172. Look up a few recipes on "Scalloped Corn." I think you will put the mystery pieces of the puzzle together on this dish. It has been a family favourite of ours for generations. Be safe on your trip! 🛩

Mrs. Noble may have intended the crumbs and butter to be added to the mixture, rather than spread on top. Julie, this should make it less like creamed corn! I'd try it again that way. I'm undecided about the sugar, but black pepper sounds like a great idea.

My family is from Central Kansas. All of our family recipes have at least a tablespoon of sugar in them. Why? I don’t know! We just add sugar to everything.

My wife gifted me with 2 overripe bananas the other day and I thought what would Glen do with these? A quick search found this video so I made the recipe to surprise her. I don’t have a 6” cake pan and since I had 2 bananas I used a 9” pan, doubled the recipe and increased the baking time to 25-30 minutes. As a 9” pan has 2.25x the area of a 6” pan this worked very well. Since Julie encouraged us to make the recipe our own I chose to sprinkle some semisweet chocolate chips over half of the pan to provide a couple of taste choices. Delicious! My wife and I like both the original and the chocolate version so we’ll be making this quite often.

my family used to make a similar dish but the process looked like this (copied from a recipe for scalloped corn" Preheat oven to 350. Mix all ingredients together. Sprinkle a lite layer of additional breadcrumbs on top of the scalloped corn. Bake for 30 minutes. It's actually delicious made with creamed corn and maybe part with whole kernel, and I think the peppers would be an okay addition but we made it without. It bakes up nicely, more of a pudding consistency.
