So interesting! I never knew how maple extract was made. A local maple syrup company ages their syrup in used whiskey & bourbon barrels & it really adds flavor to the syrup. This spirit would be interesting to try.

Rum was my first instinct, but never considered Maple Syrup. I'm surprised it wasn't more common before now. I'll check out the LCBO on my trip up this summer. Would be nice to have at least one bottle in the bar.

Growing up in an Italian community in southern Ontario I do seem to remember Grappa floating about, but never tried it. It wasn’t until living and working in Kentucky briefly that I was introduced to moonshine. You and Daniel both have great channels. I’m sure it was fun.

Not sure if Glen will see this, but I'm from Naples, NY and there is a little distillery there called Hollerhorn that produces maple spirit. I find theirs tasting similar to tequila. It's not too far from Toronto (maybe 4-5 hours) if you're ever in the finger lakes area, you should check it out!

That's a wild Wiskey Vault! This episode reminds me of business trip to Holland. Kept seeing commercials for 'Genniver. ' A distilled spirit in brown ceramic bottle. So I brought a bottle home and it turned out to be a Gin, but heavy on the botanicals. Never seen it for sale in the USA, oddly. Maybe for same reason your maple Canadian spirit isn't imported to USA? Spirits must be classified by type, by the BATF, and maybe these don't fall into the rum, gin or whiskey group?

Officially they are classifying it as an eau-de-vie and government agencies seem to be happy with that. They are even pushing for a Protected Geographical Indication much like Cognac or Champagne. Probably the biggest reason they aren't yet shipping to the US is supply. It was hard enough to get my hands on a bottle in Quebec where it's made.

Very interesting! Because I am a former drinker, I obviously don’t imbibe in alcohol and I am wondering now if there are non alcohol equivalents to spirits? Or, does any fermentation process always produce an alcohol?

All fermentation (even bread) creates alcohol, so some of the '0% alcohols' use different methods to remove the alcohol while trying to retain flavour. While others try to replicate a spirit flavour without fermentation. Some still have a small amount (0.5%) of alcohol in them without having to declare it.

In the metabolic chain, you can have other organisms digest the alcohol further into vinegar (and ultimately into acetyl-CoA). Alcohols->aldehydes/ketones->organic acids, which is basically how you make kombucha.
