This is a beautiful song that I've played for nearly two decades and it has been recorded many times over. Both of you are AH-MAZINGLY talented and gifted, but in my humble opinion, with some songs, you want to maintain the integrity of the song by not over-playing it and losing the melody.

how do you approach thinking about the right-hand chords before you play them? is it just memorization and muscle memory for each key? or are you thinking that you’re going to play some type of dominant or altered chord without the root

Both kind of. I usually think of some type of dominant (or any) chords without the root. The right hand chords depend on what voicings I want to use. Memorization and muscle memory definitely play a part too, though.
