As someone who already likes liver, this looks amazing. I would make one suggestion, though. Try adding thinly sliced sweet apple (gala, Honeycrisp, etc, NOT granny smith), to the frying onions. It's great!

Had a old hunter tell me he thought that adrenaline + blood flow after being shot and if animal collapses 300yds away VS a heart shot. Idk how true that it. He bragged and froze the heart he struck perfectly with a arrow and the meat was the best venison i ever had.

I just want to say thank you for the explanation. I am not a hunter myself, but I have always wondered why wild caught venison that I have tried tasted gamey. Back in 85 my Mom and I went to Germany as part of a Credit Union Tour and we had venison fillets ins a brown sauce that I couldn't get enough of, I am 55 now and I still remember that as being one of the best tasting meals I have ever eaten. Now I think/realize that is was probably how they butchered the deer. This, I wonder why, search started today because I saw that the deer population in England had exploded, and they are giving the meat to food banks to help the poor/worse off people with meat protein.
