Technically it's the acid in the mustard that emulsifies the egg, which is water based, and the oil. This works for any emulsion, you simply pick an acid with flavours that compliment the dish

This is how I make my mayonnaise because this is extremely healthy of course please use organic pasture raised no antibiotic or hormone eggs use extra-virgin olive oil. The best quality then you use a salt like a Himalayan a very high-quality organic mustard that doesn’t have pesticide sprayed all over it. That’s actually how men are supposed to be made. They all the store-bought ones contain sugar and all artificial stuff and it will kill you.

Crap. My Grandmother used to say when she was doing mayonnaise or Aïoli BY HAND, when finished turn upside down the recipient and the mayonnaise must not fall from the bowl. You can try that with YOURS....

It is so wierd to put the whites of eggs in the mayonnaise and blend the whole thing together... The color of it is not right. But I must say the texture looks good anyway. I'm french and making my own mayonnaise for more than 10 years now. Everybody loves it but I will give it a try.

Hello, I do not speak native English. If I have paprika or chilli powder for fried eggs, just keep in mind that it is likelier for me that vegetarians and vegans will resolve for meat eaters. Meat eaters are faster. Egg whites are also suitable for rice and/or dishes with flour. But that is my opinion because I do not know what regional vegetables must be treated. Some sorts of oil are easier to consume than others. If I have mayonnaise only occasionally, it is easier to use the whole egg. Some soups start with sauce bechamel, and occasions must be spotted with what must be maintained. I really appreciated any help you provided. I will try it.

If you're cooking for yourself or your family don't do this much, not even half this much, one or two yolks and a bit of oil is enough for like 1-3 people, homemade mayonaise has to be eaten before 24 hours so you''ll be throwing almost all of it if you do this much

Great now let’s make this healthy: 1. Pasture raised organic eggs where chickens are not fed corn and no antibiotics or hormones 2. Extra Virgin olive oil from a container that no light goes though 3. Celtic sea salt or Himalayan salt 4. Mustard must be made fresh high quality not processed 5. Vinegar is great

thanks i was getting broken mayo- and now i realized i was using the wrong attachment. Also my design of my whipping attachment was NOT like the others...where mine has all solid on the bottom of the attachment and the others have scalloped indentations on the bottom since theirs is only for whipping.... mine is designed for multi purpose use and other attachments
