Workers wages are generally based on a certain number of sick days, so you earn less per day because it's assumed you will take these days off. If you take them all off you are then fully paid. If you do not take any you are not only being under paid, but possibly doing your colleagues work who are off 'sick' (AKA Duvet Day). If workers were paid better they could manage their own sick pay via saving or buying insurance etc. Council workers often add their holiday allowance and sick pay allowance into one and take off the full allowance each year effectively as holiday allowance.

No. You dont need to sign a new contract for holiday (or salary/grade increaes). You only need to sign a new one if say your duties/terms change drastically. So dont worry.

Normally, if you’re based in the UK, a company would confirm that in writing as a change or an edit to your contract rather than giving you a whole new one as that’s easier/ quicker 👍🏾

It's a pity menopause hasn't been added to the list of protected characteristics covered by the Equalities Act. Not only is it debilitating from a mental health perspective, it can attract some misogynist attitudes - so it's shading into the area of sexual discrimination as well, I'd have thought.

For the Carers' Leave Act, does the caring for someone have to be of a relative, friend etc? Do employers have discretion to deny the leave if they felt the justification was inadequate?

For Carer’s leave, no it doesn’t have to be a relative, just someone who meets the criteria of needing long term care, falls into the definition of being disabled within the equality act or needs care in their old age. In terms of denying leave, employers can’t deny it but they can ask you to delay it.

This is a slam dunk case clearly and shows employers will never admit liability for any concerns raised where there are legal repercussions. HR is defiantly not an employee’s friend.
