For ginger I recommend storing pieces of ginger in the freezer and when you need to use it use a micro plane or grater on the frozen ginger.

Baking soda has a stronger effect to lower the pH of the skin to break it down more. Baking powder is just baking soda with cream of tartar (I believe).

what happens if you chop the garlic and put it in the fridge not the 'freezer then fridge'? Can it stay good to eat for a month at least ?

One time we did that and the garlic got somewhat slimey but I think that was longer than 1 month in the fridge, never had that issue when we froze the garlic first. I think it was due to the excess moisture that made the garlic slimey.

The whole pork belly is quite large and the fat /meat layers are irregularly shaped in the end portions of a whole pork belly. A center cut piece of pork belly is exactly that, a piece cut from the center of a whole pork belly. The fat and meat are much more evenly layered in this section and the center cut tends to be more flat so the skin cooks more evenly.

I have a 12" Misen, and I have a love/hate relationship with it. I want to love it, but... It is warped, and doesn't heat evenly on my glass top stove. The insulating sleeve on the handle is not firm, and tends to slide off. The pan sits mostly in the closet. I'm considering buying a higher rated pan.

I understand your frustration. I recommend warming up your pan in the oven and then using a mallet or sledge/ball peen type hammer to flatten it out. If you buy a higher rated pan they will probably be heavier which isn't much of a joy to use either.

I think it's possible to do the blueing on an electric stove. I recommend using a higher smoking point such as canola or grape seed oil instead of coconut oil for seasoning. But after that... Cooking with coconut oil would be great!

I don't notice much of an odor in the fridge or freezer so unfortunately I don't have any advice on that front. Sorry! We do usually keep the thawed garlic in the sections that we store our vegetables, though.

Good stuff. Don't know why folks unused to woks don't blue as part of their pan prep: perhaps because of the warping risk with a flat bottomed pan if brought up to bluing temp too quickly/unevenly (I appreciate it only happened here because of the unfamiliar heat source... and appreciate even more that you included the issue _and_ its remedy)

Just freeze until it's frozen and in my experience stays good for 3+ months in the fridge after thawing. Don't need to put it back in the freezer.

I think it's fine but I highly prefer to store minced garlic without oil. Just freeze the garlic by itself and then use oil when you're ready to use the garlic.

Bro, I love your take on the onion, and ginger incorporation to the marinade. Marinaded the chicken overnight. Turned out phenomenal. I will admit I didn’t use your seasoning spice mix that went on the finished product. Went with a different recipe. It’s the sugar man, just cant do it. Also, I tried it with and without Sichuan pepper powder (already ground…. The commercial bottled kind. It doesn’t numb up your mouth like the fresh roasted and ground, but has the flavor). Night and day difference! Try it if you can find it. I got my powder a month ago while visiting Japan. I prefer to roast and grind my Sichuan pepper for dishes like mapo tofu. Anyway, thank you very much for your video. I learned a lot.

Freeze the garlic as directed and then keep in the refrigerator to be used as needed. I’m just finishing the last teaspoon of my fresh garlic that I used this method on last spring 2023 and it’s now Sept. 2024. It’s still delicious!

Can try using nutmeg powder and garlic for a Danish taste of crispy pork belly
