Question! Instead of paramount crystals can you use vegetable shortening?
@confectioneryhouse
@confectioneryhouse 19 күн бұрын
Yes you can! I recommend the paramount crystals because they're the same fat that's used in the chocolate melts. They're in a more solid form than vegetable shortening, so they run less of a risk of making your chocolate too soft. They also won't change the mouth feel or flavor of the chocolate melts. However, using vegetable shortening in a pinch will work just fine. I'd start with a 1/4 teaspoon to a pound of chocolate and add a little more if needed.

Depending on your project, you can use luster dust to paint the chocolate after it's completely set up. You can either dust it onto your chocolates or mix it with vodka to paint it on (the alcohol evaporates).

What about peppermint emulsion?
@confectioneryhouse
@confectioneryhouse 9 ай бұрын
I would suggest using the Peppermint LorAnn flavoring oil in chocolate instead. Peppermint emulsion works well for truffle and candy fillings, cake batters, frostings, etc. But it won't work well in chocolate as it will cause the chocolate to seize.

does the regular white chocolate make a difference when coloring opposed to super white chocolate? is the color more vibrant with the super white?
@caffeinatedentelliere
@caffeinatedentelliere Жыл бұрын
Merckens super white has titanium dioxide to make it "super white" and opaque. This is great for getting good coverage when dipping darker foods, but i find it makes it tricky to get a vibrant color. Great for lighter colors like pink, baby blue, lavender etc. However, I've never tried using as much color as she does in the video😯

I see you're asking what chocolate you can use chef master food coloring with. You can use any brand of candy coatings for this project. As shown in the video, I used Merckens brand white candy coatings. You can add candy food coloring to white chocolate to make the exact color you would like, or you can add it to colored candy coatings to alter the shade. Hope this helps, and thanks for asking! ;)

@purplebunnyprincess7651
@purplebunnyprincess7651 Жыл бұрын
The video is titled "how to color chocolate using candy food coloring" and she did just that. If you’re referring to "how to mix colors" or a “how to mix the color you need" Then i suggest you go look up “color theory with magenta yellow and cyan how to mix colors". And even if they’re teaching you with paint, it should still apply. I’m not sure why you think this tutorial is bad. The only thing I see wrong with it is that she didn’t used true primary colors, as red it not one of them, and can easily be made with the true primary colors magenta and yellow. Other than that it’s pretty cut and dry and she did great.

@purplebunnyprincess7651
@purplebunnyprincess7651 Жыл бұрын
@@ladysinger84the reason this is happening is because your using red and not magenta. Red is not a primary color. And does not make cool pinks as it contains yellow. Please use magenta to make purples and pinks.
@purplebunnyprincess7651
@purplebunnyprincess7651 Жыл бұрын
If you want pink use magenta. If you want red, use more food coloring. If red food coloring is just turning coral, it’s too diluted and you need to use more.

Though they are easy to work with (they dont need to be tempered), candy melts really dont taste as good as real chocolate, not even close. They are waxy and artificial tasting.
@confectioneryhouse
@confectioneryhouse Жыл бұрын
Hi Patricia! You bring up such a great point! You're right, most candy coatings do taste waxy and artificial, I completely agree with this. However, Merckens Candy Coatings are a completely different story. Our Merckens chocolate melts have a huge following for this exact reason and it's because the creamy, melt in your mouth flavor is unlike any other candy melt. Hopefully you'll give them a try sometime! Happy candy making :)

Should I choose to use a different chocolate how would I determine if Paramount Crystals are appropriate? PLEASE educate my ignorance, lol!
@confectioneryhouse
@confectioneryhouse Жыл бұрын
Hi Roxanna, in this video we're using merckens chocolate melts. If you're using a lorann oil that is labeled "flavor" you'll most likely need paramount crystals as the flavoring will thicken the chocolate. If the Lorann oil is labeled as "natural" you probably won't need to add the paramount crystals. However, I always recommend having paramount crystals on hand when working with candy melts, sometimes you'll get a batch that melts thick and the paramount crystals help thin the melts back down.
