Ingredients: 500 ml orange juice 50g cornstarch 60g sugar Shredded coconut (for coating) Instructions: In a saucepan, mix together the orange juice, sugar, and cornstarch until fully dissolved. Cook the mixture over medium-low heat, stirring constantly until it thickens. Once thickened, pour the mixture into a greased serving dish or mold. Allow it to cool for about 10 minutes, then cover with plastic wrap and refrigerate for 2-3 hours. After chilling, carefully remove the dessert from the mold and coat it with shredded coconut before serving. Making the pastry cream: In a medium bowl, combine eggs, sugar, cornstarch, and salt, and whisk until completely smooth and lightened in colour, about 2 minutes. Add milk and mix well to combine. Set it over medium-low heat and whisk constantly until thickened. Turn off the heat, add unsalted butter, and whisk in vanilla extract. When it’s done, the cream should be thickened, smooth and glossy. Transfer the cream to a bowl and place plastic wrap directly over the surface of the hot cream to prevent skin from forming and let it cool completely at room temperature before using. 2. Super soft and fluffy Ingredients: 400ml warm water 1 Tbsp sugar 2 tsp yeast 2 Tbsp olive oil 4 cups flour 1 tsp salt For top brush: 1 egg 1 Tbsp milk Instructions: 1. In a bowl, combine warm water, sugar, yeast, and olive oil. 2. Add the flour and salt. Mix until the dough forms. 3. Cover the bowl and let the dough rise for about 45 minutes in a warm place or until doubled in size. 3. Grease and line a 9” (20cm) square pan. 4. Once the dough has risen, turn it out onto a lightly floured surface and cut it into 12 even pieces, depending on the shape of your baking dish. 5. Roll each piece of dough into a ball and place them onto the prepared baking pan. 6. Cover the dinner rolls with plastic wrap and let them rise for another 45 minutes in a warm place or until puffed. 7. Brush the risen rolls with egg and milk mixture or only with milk. 8. bake the rolls in a preheated oven at 350°F (180°C) for 25-30 minutes or until the tops are golden brown. 8. This peach pie is packed with juicy, ripe peaches wrapped in a flaky, golden crust. It's the ultimate summer dessert, sweet and full of flavor! Ingredients For Butter Pie Crust Dough : 300 g all-purpose flour, plus more to dust, *measured correctly 1/2 Tbsp sugar 1/2 tsp sea salt 230 g cold unsalted butter, diced into small pieces 7 Tbsp ice water For filling 5-6 peaches , pitted and sliced ( peeled if desired) 1 tsp lemon zest 1 Tbsp lemon juice, freshly squeezed 4 Tbsp all-purpose flour 1/2 cup sugar 1 tsp vanilla extract 1 egg + 1 Tbsp milk for egg wash How to Make the Crust: (You can make the crust with your hand or food processor) 1. Mix together the flour, sugar, and salt until combined. 2. Add cold butter (I cut the butter into small (1/2-inch) cubes ( you can freeze the butter cubes for 15 minutes before using) Rub the butter into the flour using your fingertips. Your butter should become pea-sized. Add ice water, 1 Tbsp at a time, and mix between each addition. Your dough should be ready when it just begins to clump. Form the dough into 2 disk. Don’t overwork it; just pat it into a disk shape. Cover with plastic wrap. Refrigerate for at least 1 hour. 10 minutes before assembling the pie, make your filling. How to Make the Peach Pie Filling: 1. Combine all of the dry ingredients in a small bowl. 2. Pit peaches and slice into thick slices. 3. Transfer peaches to a large mixing bowl. Add lemon zest, lemon juice, vanilla extract and gently stir. Sprinkle with the dry ingredients and gently stir to combine. Assembling: Start by rolling out the first dough disk and line your pie dish with it. Keep the second dough disk refrigerated until you are ready to make your lattice top. Add the peach filling into your prepared pie shell. Now roll out the second disk ,this one doesn’t have to be quite as wide as the bottom layer, but you want enough to go over your pie dishes rim. Cut the dough evenly into 12, about 1" wide strips, with a pizza cutter. Using the strips of dough, create a lattice crust over the top ( please watch the long video ) Beat together the egg and milk to make your egg wash. Brush the top of your pie generously with egg wash. In a bowl, whisk together the egg yolks, salt, 50g sugar, and vanilla extract until the mixture becomes light and foamy. Set aside. 2. The best vegan dip , Olive, Pomegranate, and Walnut Dip (Zeytoon Parvardeh) Ingredients: 450g pitted olives 1/3 cup pomegranate molasses 1 Tbsp lemon juice 3-4 cloves garlic, minced 1 Tbsp dried mint 6-7 sprigs coriander finely chopped 150g walnuts finely ground 3 Tbsp extra virgin olive oil 1/2 pomegranate Instructions: In a large bowl, add ingredients and stir well between each addition. You can serve it straight away or transfer it to a jar with a lid; seal and keep it in the fridge until it is time to serve, up to one week. This dish originated in northern Iran near the Caspian Sea, where locals make it with regional herbs. It also works well as a colorful accompaniment on a cheese platter and can be served with thin bread, such as lavash or baguette slices, or on crackers. Apple upside down cake Ingredients: For the Cake Batter: 200g unsalted butter, at room temperature 220g sugar 100g yogurt 3 eggs 1 tablespoon vanilla extract 415g all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk For the Caramelized Apples: 3 apples, chopped 1/2 cup brown sugar 1 teaspoon cinnamon 2 tablespoons unsalted butter Pinch of salt Instructions: 1. Prepare the Caramelized Apples: In a pan, mix together the chopped apples, brown sugar, cinnamon, butter, and a pinch of salt. Cook over medium heat, stirring constantly, until the mixture turns a light amber color and the apples are caramelized and softened. Remove from heat and set aside. 2. Make the Cake Batter: Preheat your oven to 350°F (180°C). Cream together the butter and sugar until light and fluffy. Add the yogurt, eggs, and vanilla extract, mixing well after each addition until smooth. Sift in the flour, baking powder, and salt, then mix until combined. Simple & Quick Puff Pastry Dessert with cream cheese Ingredients: 1 puff pastry sheet Cream Cheese Frosting: 5 Tbsp cream cheese 1 Tbsp icing sugar 1/4 tsp vanilla extract Fruit Filling: 1 cup of frozen cherries and blackberries 2 Tbsp unsalted butter 2 Tbsp brown sugar 1 tsp lemon juice Brushing: 1 egg yolk 1 tsp milk Instructions: Preheat the oven as directed on the puff pastry package. 1. Prepare the Cream Cheese Frosting: In a bowl, mix together the cream cheese, icing sugar, and vanilla extract. Set aside. 2. Shape the Puff Pastry: Roll out the puff pastry sheet and cut it into six equal squares. Gently fold each square diagonally to form a triangle. With a soft, buttery dough filled with sweet cinnamon sugar Easy and Fast Cinnamon Twist Loaf Ingredients: 1 1/2 Cups Warm water 3 tsp yeast 2 Tbsp Sugar 420g All-purpose flour 1 tsp salt Filling: 2 Tbsp unsalted Butter, melted 1/3 Cup brown sugar 2 tsp Cinnamon Instructions: 1. Combine warm water with yeast and sugar. Mix and let it proof for about 5 minutes. Mix salt and flour, then add the yeast mixture. Stir with a spatula and knead until a dough forms. Cover with plastic wrap and let it rest for 30 minutes. 2. Transfer the dough onto a floured surface. Sprinkle flour on top if the dough is sticky. Roll the dough into a rectangle. Brush the rectangle with melted butter. Sprinkle and spread the cinnamon and sugar mixture to cover the dough. Roll the dough lengthwise like cinnamon rolls. 3. Ingredients For the Cake: 400ml milk 40ml plain yogurt 250g sugar 120ml Oil sunflower 2 teaspoons vanilla extract 20g corn starch 2 + 1/2 teaspoon baking powder 1/4 tsp baking soda 300g all-purpose flour 1/4tsp salt Instructions: Preheat the oven to 350°F(180°C). Grease two 9-inch round cake tins with butter and line them with parchment paper. In a bowl, combine room-temperature milk, yogurt, sugar, oil, and vanilla extract. Mix until the sugar is almost dissolved. Combine and sift all the dry ingredients and mix them into liquid ingredients. Pour the cake batter equally into the prepared cake tins and bake in a preheated oven for 25-30 minutes or until firm to touch. For the Mango Curd: 230g (2 medium ripe mango) finely grated mango or Mango Purée 60ml milk 60ml water 1/2 tsp vanilla extract 60g Sugar 20g corn starch 50g unsalted butter Instructions: In a pot, mix together the milk, water, and cornstarch. Once the cornstarch dissolves, add sugar and vanilla extract and mix until the sugar almost dissolves. Add grated mango or mango purée and stir constantly until boiling, then let it boil for 30 seconds. Turn off the heat and add butter. Stir the mango curd until the butter is fully mixed, and the curd looks smooth and glossy. Transfer in a bowl, cover with plastic wrap, and refrigerate to cool completely. For whipped cream: 3 cups heavy whipping cream 1/2 cup powdered sugar 1 tsp vanilla extract Whip the cream until a stiff peaks. layer the cake with whipped cream and mango curd.
