Glad to see you're making videos again! Just a little more info on the rations, it's 10% of your weight for water, 2% of your weight is salt, 3% by weight for the main flavors you want, 1.5% is your secondary and .75% for your back ground notes. Also, .25% for your pink curing salt. That's CURING salt. No, that's not another term for pink Himalayan salt. If you use pink Himalayan salt as a sub for pink curing salt, you probably won't die, but if you did, you wouldn't be the first. And you'll wish you were dead after spending a week doing unspeakable things to your poor toilet.

Ricer's Brat Recipe 1,000 Grams of Pork Butt 16 Grams of Sea Salt 6 Grams of Dextrose or Sugar 3.5 Grams of Black Pepper or White Pepper (White is hotter) 1 Gram of Ground Coriander 3 Grams of Ground Nut Meg 1 Gram of Ground Marjoram 1 Gram of Ground Caraway 1 Gram of Ground Ginger 1 Gram of Ground Celery Seed Optional 25 Grams of Water or Cold Beer Optional 2-3 Egg Whites Final Grind Through a 1/4” plate. Make sure meat is below 34° when grinding so the fat does not smear. Mix ingredients until you have a decent protein extraction. Stuff in 32-35mm hog casings. Make 6” links and prick to get out the air pockets. Place in fridge overnight and then separate links. Vacuum seal and freeze for storage. Grill or fry in a pan until they have reached an internal of 145-160°
