This was really helpful. I have a Santoku and was afraid to break down a chicken with it. I was considering a cleaver or a boning knife. The demo was great I think I can make better use my knife now that I know it's capabilities.

"Granton dimples to prevent food from sticking to the blade....." The very next shot shows food sticking to the blade. 😂😂 Also, this knife is not Japanese. The name suggests that it's Japanese, but that is a marketing ploy. That kind of dishonesty really bothers me. These knives are actually made in Taiwan by a German company. Still, it is a good knife, but by no means is it Japanese.

Both are excellent! The Tojiro has a 9.25-inch blade, whereas the Victorinox has a 10.25-inch blade. 10.25" was a little too long and less comfortable for us.

@@knivesacademy398 Small filet and boning knife. My buddy worked at a Tyson processing plant before he joined the army and he could cut up an entire chicken in less than a minute with just a filet knife. I do it to save money.

Most people have a one-knife approach to the majority of kitchen tasks but I hope that these kinds of videos not only showcase them but teach them the general use as well. Yeah, technique and experience helps but understanding the basics is the first step to all that.
