Hi Sarah, while raw egg whites can potentially carry bacteria like E. coli, using fresh, properly handled eggs which were stored in the fridge can bring that risk close to zero. You can also use aquafaba which is the water from boiled or canned chickpeas. Cheers!

Hi there, To determine the alcohol concentration of the final liquid, we need to calculate the amount of alcohol present in the rum and then consider how it dilutes when mixed with water and sugar. 1. Calculate the amount of alcohol in the rum: - Volume of rum = 225 ml - Alcohol by volume (ABV) of rum = 63% Amount of alcohol in the rum = Volume of rum * ABV = 225 ml * (63/100) ≈ 141.75 ml 2. Calculate the total volume of the final mixture: - Volume of water added = 300 ml - Volume of sugar syrup added = 300 g (since water and sugar have approximately the same density, we can consider their volumes to be the same) - Total volume of the final mixture = Volume of rum + Volume of water + Volume of sugar syrup = 225 ml + 300 ml + 300 ml = 825 ml 3. Calculate the alcohol concentration in the final mixture: - Total volume of the final mixture = 825 ml - Amount of alcohol in the final mixture = 141.75 ml (from step 1) - Alcohol concentration = (Amount of alcohol in the final mixture / Total volume of the final mixture) * 100% = (141.75 ml / 825 ml) * 100% ≈ 17.18% So, the final liquid will have an alcohol concentration of approximately 17.18%.

REAL MEZCAL MUST HAVE over 45 % alcohol… otherwise is not real Mezcal . It’s something else: comercial and mass produce
