Ok so how long does the basil infusion stay green. I want to make some mint vodka but was afraid the chlorophyll would turn brown

In the fridge up to 3 weeks. If you keep it in the freezer (-15 degrees) though it will stay green for a very long time. I have bottle of mint rum since 8 month and the colour has barely changed

cool information on infusions, thought wondering whats the % of alcohol content of the infusions? i asume some did evaporate in the 24 hours?

I think to avoid evaporation you could infuse a smaller amount of gin with the same amount of the fruit or herb, and then mix it with the rest of the bottle. that should help with the 24 hr infusion.

Thanks for the recipe. Just curious if we can blend the raspberry and the gin together and let it infuse for a couple of weeks instead? Would that improve the flavor?

Hi John! To be honest I have never tried that. I think that the ABV (amount of alcohol) will significantly drop. Also the colour will be cloudier and less visually appealing. You might give it a try and see for yourself. I will go with a small amount though. 😊

Use tried Botanicals instead. With fresh fruits you have a high chance it will spoil. Or you will have to use something that keeps the fruits from getting in contact with oxygen👍

Due to the nature of fruits, I think most flavor and aroma compounds would release fairly quickly in alcohol, so I don't think past 24 hrs you would gain much. Also, if you blend you have to be super careful that you didn't leave any trace of stems in the raspberries or they might impart unwanted flavors.
