Small mistake: menining is pronunced Mining, the "e" in the first sillable turns to "i", not in script but in speech.

For ö you can use English words in which vowel is followed by an r. It is not the same, but sounds close enough, like earth, curve, turn, third, bird, sir etc.

You mentioned at the start that you would make it with lamb these days. I assume a minced lamb with cumin, slat and white pepper. Would you cook that first and then add it with the cabbage and onion, or would you put it in raw and just let the steaming process cook it?

The word "Lagman" come from Mandarin Chinese which means "pull-noodle". Same as the japanese word "Ramen".

in "correct" persion he/she/it should be pronuncec "o", like in dari and tajik. The uyghhur "u" is the short form of "ul/ol" so the similarities are just by chance.

I found Uighur food in Haymarket, Sydney and my mind was blown - it was Turkish and Chinese fusion! OMG, the kebabs, the thick noodles, the potatoes and stews.....pilaf, dapanji, goshnan....the dumplings.....
