Amaranth is called spinach, bhaji, spinach bhaji or chorai bhaji in Trinidad and Tobago. Callaloo in Trinidad and Tobago refers to the leaves of taro plant and a dish made from it.

Yes in Trinidad. But amaranth is said to be the scientific name for callaloo as we know it as here in Jamaica. Amaranth or callaloo is a part of the spinach family.

Please clarify. Are you cooking the chicken for a total of 7 minutes: 1) after you put it in the oil or 2) after you put the lid on or 3) after the weight starts rattling after the lid is on? Thank you

They are called ‘journey cakes’ Locals gave/sold these to travelers that were leaving the island as a snack for their journey. The word journey is pronounced ’Johnny’ by the locals. So…if these originated in North America they would be pronounced Journey cakes.

No explanation on how much pressure or how you got the lid on quickly or back off? What was the water for ? Cooling? Why?

My pressure cooker doesn't have low or high pressure gauge. It adjusts based on how high or low the flame is. To remove the lid quickly you run your pressure cooker under pipe water until the valve drops-which takes a couple seconds for my pot. Once it drops it can be opened at once as there is no pressure. The water cools the the pressure cooker rapidly.

I’m so late, but I’m making jerk chicken and some callaloo rn (your recipe!) and if you’re going to use soy sauce you should use dark soy sauce. It’ll add a lot of color, good umami flavor, and you don’t have to use as much so it won’t overpower the other ingredients.

These look GOOD!!! Definitely trying this recipe. I just made a batch of black bean sweet potato patties and learned a lot of what I need to do differently. But... your patties make mine look like peasant patties. Good work!!
