This will come out really good, I make a very similar recipe, almost identical and people just go crazy over it. A rue is what sets good Mac n cheese apart from basic. However the cheese ratio here is overkill! Delete the mozzarella! It’s totally not needed. Very few people will ever be able to taste it with these other 3 kinds of cheeses in this. Cheese isn’t cheap, no need to use too much. With velveeta, jack, and cheddar, the mozzarella is just going to cancel out. It has a much much milder and less distinct taste than these other cheeses have. Plus with 80 ounces of cheese and 32 ounces of noodles you can easily delete 16 ounces of cheese no problem at all and it will taste no less cheesy. Great idea to not add onion and garlic powders and other spices. Quite often less is more. What I do is after I have put some in a bowl I hit it with a sprinkle of old bay spice because I like old bay. It’s typically used with seafood dishes, but if you like this spice then it really kicks up Mac n cheese and it will also work really well with Lawrys seasoning.

Seasoning Salt, is salt with extra seasonings like onion powder, garlic powder, paprika, sometimes turmeric, and other seasonings. It's a really good all purpose seasoning. ❤
