My father's late mother is from a rural part of South Carolina. She put mustard on fried chicken and pork prior to seasoning them. She told me her father did it. My mother, who is from Jamaica, does the same thing. She learned by observing my grandmother use mustard. I use mustard too, when I oven fry chicken and pork. Sometimes I'll do the same for thin fish, like flounder. Or whitings. 🇺🇲🇯🇲
