Hey Jon, I wondered if you had any tips for dough that doesn’t stretch easily? When forming my circle, it likes to spring back. I make sure to let my dough rest for 3 hours after the CT, so I’m not sure what the problem could be.

You can skip the thermometer if you let the stone heat for atleast 30-40 minutes. I have timed my pizza oven (cozze) at around 30-35 minutes for a decent bottom cook, then again a cheap thermometer can just cost 20$ so to each to their own

How do those fire roasted tomatoes taste vs the regular organic tomatoes from whole ones? Also how did you make the sauce? Did you blitz it with a hand blender in the can while also using the purée in the can that is then blended with the fire roasted diced tomatoes?
