Those hand held vacuum sealers work but don't draw the vacuum that the counter top models can. There may be only about 40 lbs of air pressure holding the lid in place. You shouldn't be able to remove the lid with your finger tips. WIth a really good vacuum seal, there's about 100 lbs of air pressure holding the lid in place. Sellers of vacuum sealing machines don't advertise the vacuum in inches of mercury (for USA). The closer to 30" the better. Most are in the 18"-20" range. With microns (rest of the world), the closer you get to zero, the better. Good ones get down to 5-15 microns.

I’m intrigued by the pineapple zucchini. I’ve never heard of that. It is reminiscent of preserves such as ‘marrow jam’ made here in the UK during rationing in WW11. Sounds more delicious though.

What would i use for freeze dried apples? I have used oxygen absorbers and over like 6 months they get soft again.

Honestly, I’m seeing increasing reports of people using oxygen absorbers and having their food go soft in the jar. I always vacuum seal my jars and very rarely use oxygen absorbers, and I haven’t had that issue. (I had softening on my first couple runs as I was learning the machine and about extra dry time, but I haven’t had issue since then.)

I wonder about adding the skins of veggies and if they are introducing dirt and germs. As a cook, I have always thrown those out because I never thought they were clean. Thoughts?

When canning vegetables, I peel them first. When I make onion or veggie scrap broth, I clean them well and soak in a food-grade hydrogen peroxide solution, then rinse. For onions, I don’t use the root end (because it’s too difficult to get clean). 🙂

I usually leave oregano on its stem when dehydrating because the leaves come off more easily. Is that okay to do? I also grind oregano and sage in my little herb grinder after dehydrating. Is this a bad idea?

Nice thing with powered milk is that you can use it when making home made bread, or if you want to make a milkshake or smoothie you can use powdered milk. I also like to make “orange creamsicles” by mixing orange juice, water and powdered milk with either vanilla ice cream or orange sherbet! Powdered milk is amazing. Its great on hot or cold cereal too!

I’ve heard that, too. For canning, I’m meticulous about cleaning and removing all dirt and and bad spots due to bacteria risks in an oxygen-free environment. I’m a little more lenient in other areas.

Ok your recipes look great and recipe wise follow safety guidelines, though I don't really worry about those when I can, but since you keep mentioning "safety guidelines", I would suggest you start mentioning that your electric canner has not been proven to be safe as per government standards, which means your method of canning is considered "rebel canning". There was one agency testing electric canners and they stopped testing them, so far there is NO electric canners that have passed government tests. So no matter what guidelines you follow if you use and electric canner you are rebel canning and should state that fact to avoid any backlash should anyone get sick from following one of your videos. I didn't buy an electric canner because you can't use it if for some reason you don't have electricity. Having an actual stove top canner could save all your frozen meats and vegetables should we ever find ourselves needing to can over gas or wood stoves...Yes regulating the heat might be hard, but not having a regular canner could prevent you from saving the food in your freezer.

I appreciate your perspective, but I do not agree that using an electric canner is akin to "rebel canning." The govt doesn't test and approve any canner type - only recipes. I trust Presto to know what they're doing in building a canner as they have been the leading name in pressure canners since the early 1900s. I don't trust the other brands of "all in one" pots that simply have a pressure canning function. As for traditional canners, I agree with you and highly recommend having a traditional, stovetop canner. I don't have one because I have a fragile glass stovetop, and I'm concerned about the weight. Someday, I plan on building an outdoor canning setup. Until then, I'm using the next best thing.

Haven't read all replays, but my grandmother used to spread cayenne pepper and black pepper up and down the rows. It stopped her problem but don't know if you have same animal. Bless you and give it to Him! 🙏🙏🙏

I have had the same experience as you with the warming phase of the Presto canner.. I decided also to just go through the whole process instead of skipping the warming time. Just seems safer.

Many of us are sick of masks, but they're an important prep item. During and after our (fire) disaster we had to wear masks and hazmat suits...never know what toxins and airborne pathogens are presenting during/ after disasters. Something orange or red to display as an SOS if needed. Could be simple as an orange bandana, esp. important to have if there are no other comms. Potassium iodide tablets, esp. for young adults/ children ; nuclear fallout from nuclear plants, war . Vitamin C tablets at the very least.

One thing that I would add is extra supplies for any disabled or elderly family members. I have a disabled teen, so incontinence supplies, meds, powdered pediasure and powdered ensure or boost. Other possible needed items spare pairs of reading glasses, ankle and wrist braces, crutches, any items frequently used like bed pads, tube feeding supplies, etc

Henderson County NC here. A few additional items that kept us going for 13 days of no electricity or water. First of all, 1 gallon of water per person/day is the very minimum, you should plan for 5 gallons per person per day for at least 2 to 3 weeks. Also, a Coleman camp stove was priceless. If you can get a duel fuel stove that would be better. A solar shower really came in handy. we heated water over hot coals in a Solo Stove to fill and hung the solar shower from the shower head arm in the tub; we very much appreciated that one. Board games are a treat, we played at least a dozen games of Scrabble, and our C Crane solar radio was a huge hit. Thank you for your prayers, they are very much needed.

using wet clothes around the neck and pulse points to cool down. Wetting a bandana or washcloths and applying over the nose for deep breaths, putting your feet into water. All these things will cool your skin. Just keep wiping yourself down as needed.

Yes you can! The only one I wouldn’t vacuum seal is the cranberry oatmeal cookies because it has both dried cranberries and brown sugar, which are both comparatively “moist” and shouldn’t be vac sealed.

None of the recipes in this particular video are for canning. The liquid-based recipes need to be refrigerated. The homemade seasoning blends can be sealed in jars using a vacuum jar sealer. Does that answer your question? 🙂

1 - consider your climate for canned vs frozen, if you have a root cellar prob ok to can everything. If you live somewhere that's below freezing for months on end, if you can't heat your whole canning storage area, soups and things with lots of liquid will burst, where frozen stuff will be just fine 2 - depending on well depth you can get a hand pump for up to 25 feet the type you see on many farms for $50-100, a hand pump for up to 300 feet for $1000-3000, or a galvanized well bucket and pulley for $150 (looks like a 4-5' section of metal chimney and will go as deep as you have chain/rope for 4 - pretty sure the cheap sterno has an open flame (it's just colorless) as for keeping cool, go in the basement / root cellar (or live above 9000 feet, never gets above 60oF at night :)

Adding a small portable washing machine that can run off a small solar generator. Can at least wash socks, undies, tank tops. We are adding a 3.5 Kwh solar generator w panel as well as expanding things can are rechargeable, lower wattage bulbs and generally not use the grid where possible. In our state we had 4 utility price increases this summer. Bills are 30-40% higher than just last year. We do lose power especially when temps get high and can be without power for 1-2 days. Recommend adding in a wall tap appliance surge protector and at least a 3000-4000 J plug surge protector for everything else. When power was on/off during outage sent a spike would have killed our washer if not for the heavy-duty SP.

Eye glass repair kits can be invaluable if one can't buy new reading glasses for some reason. Sometimes it's just a simple screw that needs replacing and those screws require TINY screwdriver which is one of the items in the kit along with replacement tiny screws.

Lettuce greens don't freeze well unfortunately. They turn to mush. :(
