Do you have a link for the scoop you used when you were putting the freeze dried peppers into the mason jars?

I got that scoop many years ago (pretty sure at a thrift store). But the reason why I love it is its narrow, cylinder shape and overall size, and this one is similar to that - amzn.to/3XgKALO Hope that helps! :)

Yes, you can. The salt doesn’t play a role in preserving in this recipe. 🙂

I don’t like to add sugar to my recipes. Does this salsa recipe have to have the Sugar?

The salsa recipe sounds great! I'm assuming that it can used in a pressure canner? Since I have an electric stove top, I cannot use a water bath canner. How would I find out the number of pounds of pressure and the processing time?

You could, yes, at 10 to 11 pounds pressure for 10 minutes for pints. Interesting. I have an electric stovetop, and I water bath can all the time, yet I’m nervous to use a traditional stovetop pressure canner on it! Lol

I had a water bath canner once and the water never reached the boiling point on my cooktop, so I looked at the canner's booklet and it said that it was not to be used on a ceramic cooktop, so I've switched back to pressure canning only. Perhaps your canner has a different design?

No, they are all sweet peppers - a blend of Jimmy Nardello, Giant Marconi, and California Wonder bell peppers. 🙂

What makes the steam canner preferable to a pressure canner or water bath for the pickled peppers? By the way, I had never even heard of a steam canner before watching this video. Live and learn!

A steam canner is only an alternative to a water bath canner. I prefer it because it heats up quickly, so it reaches the canning point faster, making the whole process of canning quicker. 🙂 I only discovered it about 2 years ago!

@@caroldragon7545the steam canner save time as you use about 3 inches of water, so it heats much quicker allowing to to a quicker turn around with multiple batches. You can really see the difference when processing water bath & steam canner at the same time & can double stack too. Also saving water. I believe well worth the investment to save time every single batch. Happy canning

Experiment: maybe try adding jalapenos to the zucchini pineapple recipe make a small batch see how it goes

Why don’t you just pressure can your recipes if there’s a chance the acidity is off. I pressure can almost everything. It’s easier to me than trying to figure out the acidity level in a recipe. Water bath canning (my opinion) is too much hands on. When I’m doubt I just pressure can and have everything timed and able to walk away (in the house) and work in other things while the canner is working. Just wondered.

I do pressure can everything that should be pressure canned. The “not just sandwich spread” recipe has a large amount of vinegar in it and was very much acidic as the pH strip indicated. The reason why I didn’t want to pressure can that recipe is because I don’t love the taste of pressure canned tomatoes. I can’t quite put my finger on the taste or how to best describe it, but it’s almost like they taste overcooked. 🤷‍♀️
