If your pineapple tepache develops mold at the very top on exposed fruit do you have to throw it away and try again?

This is very interesting. I've been toying with the idea of creating a PB&J beer for a while and finally doctored up a recipe to do something with a brown ale base. I came across this video (damn AI reading my thoughts) and happy to see someone else did it. I'm not looking to make a sour and I also had a TN beer that was very good (not the same one) that was a PB&J beer. I picked up some PB2 to use for the peanut butter addition but I was thinking about trying APEX flavoring for a Raspberry Jam taste. I'm glad I watched this because now I wonder if the PB2 taste will stick around...sounds like it won't. I shouldn't have to stabilize with my version but it's good to know what will work, so I can stabilize it after and add some concentrate is the flavoring isn't enough. Cheers!

Why do you bulk ferment it? Would you not want to bottle up immediately to preserve the freshness of the lemon juice?

I haven't tested this yet, but I wonder if you throw a little bit of yeast and some table sugar, like you would when making bread and dough's, with the hops maybe that would do that bio transformation, then put in keg, not sure how long that would take, a few hours, a day.. but if I try it, I'll report back. I do the lime and lemon with dry hopping the hops and that works great.

I’ve tried and failed several times to make ginger beer. Not sure if there was an issue with the bug or any of the recipes that I’ve been using, but they kept failing. Tried this one and I had MAX carbonation in 2 days lol. I’m drinking it now and it is incredible. I didn’t add any spices or citrus. So I’m excited to do it again with spices! Great recipe!

I’ve simplified & slightly adjusted the recipe: Pineapple Tepache 🍍 3,5l boiled and filtered water 1 pineapple peels 1 cup brown sugar (130g) 1 cinnamon stick 1 tsp cloves 1 tsp other spices Don't use the core Ferment for 3-5 days Bottle condition for 1-2 weeks

If the 25% Tariffs go into effect on Canadian Barley it will be a knife in the back of the craft beer industry! Canada produces three time the barley of the USA. Breweries are struggling due to rising costs from the War in Ukraine and the pandemic.by the way if your not informed the Canadian dollar is $0.69 vs the US buck. I Love American craft beer, many wont survive. Call your congressman, senator and governor and let them know. One president is solely responsible for creating the industry ( Jimmy Carter ) and another for wiping it out! ( D.J T. ) very sad.

The rubbery thing is actually the pellicle of the scoby. The scoby is the entire liquid itself + the pellicle.
