On the kegging,, aren't you supposed to avoid metal coming in contact with Kombucha? Some say you aren't even supposed to use a metal spoon to stir?

Lol, I did this with completely uncooked rice and champagne yeast and it turned out exactly like normal sake. I cannot justify a single reason to go with Koji as your starter culture.

Oh thats interesting, its my understanding there would be almost no fermentable sugars if you dont use koji, but thats cool it worked for you

@@TheBruSho if you're interested, I'll let you know if it works. Seriously, just trying this for the first time. Koji is just adding natural yeast, so my guess is that the end product just ends up a bit different, but you still have rice "wine".

you could get a weight or fill a plastic bag with water and float it on top to weigh things down. but usually the salt helps with mold so its less of a concern

I'm not big on cranberry, but the orange sounds great. If I were to brew this without the cranberry, would you keep the same amount of orange peel or add a bit more? Also, would you just add the orange during the last 5 of the boil, or would you also do like a dry hop but with orange peel? Great video, thanks!

I have been hard-pressed to find a bottle of unflavored kombucha with live cultures in the Portland area. I've even gone into market of choice and other higher and grocery stores but it seems like GT is catching on to the idea that we are making our own scobys

So I was hoping you could help me I started with making a 6 gallon batch and I'm at the 2-week point of the second fermentation I'm down from one to five down to 1018 on the brix and the one thing that I noticed that I didn't do is I only added one of the 05 yeasts packs do you think I should mix in another pack or two or should I just let it keep being slowly active like it is and it's slowly working thank you for your time and your videos are awesome

I could not find a plain kombucha. I bought the flavored one. It worked just the same. Had my first scoby after almost a month.
