Ya need some armor defense my boy, invest faith or int minimum stat required to buff or enchant your weapon forget which ones are the best, upgrade your strength weapon of choice although ultra great swords are a good choice and lastly invest into strength stat

There's some attacks which you can kinda spam out of, like the giant dog putting you in his mouth. Just spam the triggers a little and you might get out

Jericho buddy sometimes you just gotta chug a bit harder. If you keep mashing the estus button you drink more in quick succession so you can take 2 flasks and get full health

There is an invisible bridge there just at the lower level. You have to go down the stairs and then walk off towards the courtyard. You should be walking straight to the tower. I dont remember if you have to have the lift up or down.
