Heavy cream is 36-40% fat. That is a ratio of 11:9 of whole milk (about 3.5% fat) to butter (about 80% fat). So, you've put in about 1/2 of the amount of butter necessary to make heavy cream. And, instead of heating the butter and then letting it cool to mix with the cold milk, try warming the milk on very low heat with the butter cut into tabs in it, stirring it periodically -- you won't risk burning the butter or separating the milk solids from the butterfat. When the butter has melted into the milk, then blend it.

I always keep cans of evaporated milk on hand. Whenever a recipe calls for heavy cream (that does not need to be whipped), I swap out equal amounts of the evaporated milk for the cream. It's cheaper, convenient, and healthier. However, I love the idea of making this at home and will definitely make this!

Stands to reason. Butter used to be cream. Kinda a bit like reconstituted butter😊 I sometimes use butter and milk in my coffee if I'm out of 18% coffee cream

I love that you measure with the heart with the vanilla. I do this all the time. Recently I cooked some fudge with my much loved sister-in-law. She had a fit though because I measure a tbsp of butter with my heart. The fudge turned out just fine. LOL.

I’ve got the same masher😅 I’ve had it so long, I don’t remember all the other stuff that came with it, but I know the other parts didn’t hold up as good as the masher. I think I got mine from Sky City in Tennessee. That looks real good 😋❤

The Sunday leftovers of roast beef, gravy, and whatever bits of leftover veggies. Ex, green beans, peas, corn etc, from our dinner, goes into a pot to make soup. I add in extra mixed veggies, sauteed onions, a can of diced tomatoes, beef base, beef broth, a bit of Worchester, basil, oregano, salt, pepper. I simmer for maybe 30 minutes.

I use buttermilk powder. 1 tablespoon of powder for ever cup of milk. I mix the powder in my dry ingredients then add any milk to the rest of the recipe. I don't mix the powder to the milk cause it doesn't seem to mix in easily and powder sticks to the edges. Thank you for this as I often want to do this instead but was unsuccessful doing it with vinegar because my fried chicken gravy tasted really vinegary. I think I must of used too much!😅

Other types of milk, redue not only the cream, fat content, which is the health bits, natural fats, but they add sugar to it.. bad sugars, artificial types which cause cancer, same as those soy and almond milk types..bad for you... I just love all the information you give on saving money on products you can make at home.. much love and appreciation from Australia

These are great substitutions for buttermilk, but if you'd like, you can make and keep your own supply of home cultured buttermilk on hand. When there's just a quarter to a half cup of buttermilk left in the bottle, and you'd like to make more, fill the buttermilk bottle with whole milk, stir and put lid on loosely and let it set out on the counter for 8 to 10 hours. Then refrigerate. The bit of buttermilk left in the bottle, cultures the whole milk turning it into buttermilk. When you're almost out again, repeat.
