I tried this method but it came out tasting like a normal beef burger rather than the sausage like taste that you get with Austrian Leberkase's. How do you get the sausage like taste with Leberkase? I used 500 grams of beef mince and 500 grams of pork mince and put it in the oven for 1 hour at 160 degree celcius.

I'm sorry to hear that your meatloaf didn't turn out as expected. It's important to use curing salt and icy cold water. Be sure to knead the meat mixture for about 10 minutes, gradually adding the cold water. I hope this helps!

Thank you for sharing! Your recipe is Very similar to my uroma's. The only difference is we use worcestershire sauce instead of mustard in the filling, and all ground beef. I also fry up a bit of chopped bacon for the oil to brown the kohl (this is the pork flavoring), and add the tomato paste to the pot while they're cooking. Delicious recipe. Highly recommend this to anyone looking to cook a traditional German cabbage roll.

You can place the bread on a baking sheet instead. Be sure to cover it for the first 20 minutes using a stainless steel bowl or a similar item. If you have a Dutch oven, that would work perfectly as well.

They look wonderful in the video, but mine turned out dence, doughy and tasting of flour... Any pointers on what I might be doing wrong? Using self raising flour and 200°c in a fan forced oven

Here are some pointers: The dough should remain a bit sticky. Also, you only need to knead the dough gently. Additionally, consider adding a teaspoon of baking powder, even when using self-raising. I hope it helps.

These trun out very heavy, not fluffy at all. I've been making bread for 60 years. The after picture are yeast rolls. This recipe does not brown.

Delizioso! ho dovuto sostituire il pepe bianco, che non avevo, con il nero e la differenza è percettibile, meglio col pepe bianco! Credo che la prossima volta metterò meno sale. Thanks Anka, but you should mention something about the water and give some instructions, as I doubt they would be as good without that. My dough is rising now and I will bake in the morning. When I visited Germany when I was young I would help my cousin bake starting at 4:00 am. When the rolls were done we would drive around the village delivering them. Each house had its own spot to leave them. When they awoke warm rolls were waiting for them. What a wonderful way of life for them.

I wouldn't use unripe Feijoa because the fruit hasn't developed its distinctive flavor yet.
